ABC KITCHEN: Thrive in a fast paced, high volume environment with a wood-burning oven,
working with farm to table ethos using freshest, seasonal ingredients from local farms and
purveyors.

ABC COCINA: Dedicated to whole food and inventive fare using local and seasonal
greenmarket ingredients to create a Latin-influenced menu from an open kitchen.

abcV: highlights the beauty and saveur of vegetables through simple yet innovative dishes,
utilizing techniques such as wood fire roasting, fermentation, and culturing - drawing on regional
and global influences for a vegetarian menu.

Sous Chef, Commissary Kitchen for abc restaurants by Jean-Georges

Sous Chef will assist Production Chef to oversee all activity in Commissary kitchen, train and
manage personnel, review prep and production output.

They will work hand-in-hand with the Production Chef along with the Executive Chef and CDC
of three restaurant kitchens, abc kitchen, abc cocina, and abcV

They will manage the following Commissary teams:

 Prep Cooks
 Production Cooks
 Receivers
 Sanitation
Duties and Responsibilities include:
 Supervise kitchen staff, as well as keeping an eye out for problems that arise in the
kitchen and seizing control of a situation at a moment’s notice
 Be able to effectively inspire staff members to go above and beyond the expectations of
their particular roles as well as discipline underperforming staff members
 Promote positive employee relations at all times, adhering to best practices as listed in our
Handbook, and compliance with NYC regulations; speaks clearly and persuasively in positive
or negative situations
 Planning and directing food preparation in kitchen and expected to cook alongside team
 Kitchen safety, health compliance, and inspections
 Strong communication skills to ensure team is constantly being challenged and
improving, to ensure recipes are executed properly and to ensure the standards of the
restaurant are exceeded through getting the best ingredients and treating them as well
as possible

 “Lead by example” mentality with excellent leadership qualities; react well under pressure
and treat others with respect and consideration
 Be able to reach, bend, stoop frequently and lift up to 50 pounds;
 Be able to work in a standing position for long periods of time, and have holiday availability
