Aviary is an elegant rooftop bar and restaurant in Finsbury Square – just a short walk from Old Street and Moorgate. Located on the 10th floor of the Montcalm Hotel, with fantastic views of the London skyline, alongside a modern British menu, Aviary is the perfect setting to drink and dine, City high.
We are looking for a cellar manager who is responsible for the storage of alcohol and its dispensing to the bar, alongside the following;
•Organise stock rotation and replenishment
•Regular cleaning of dispense lines between the cellar and fonts on the bar counter
•Accepting and checking deliveries, returning empty casks and kegs, carbon dioxide cylinders, bottles, crates and other items which are recycled or reused, tidying and cleaning the cellar, and issuing stocks to bars
•To ensure health and safety rules are complied with
•To manage stocks; including the correct storage of wines
•To co-ordinate with the kitchen
•A keen interest in Beers, Wines, Spirits etc
•Safe working practises/ health and safety; familiar with the regulations on manual handling, the use and storage of hazardous substances, and electrical equipment.
