Description
An exciting opportunity has arisen for a Senior Sous Chef to join the team at Balthazar restaurant , part of Caprice Holdings.
As Senior Sous you will work very closely with the Head Chef and be responsible for managing all aspects of the kitchen in the Head Chefs absence.

With a kitchen brigade of 55 chefs you well be responsible for supporting the Head Chef to ensure they are effectively managed and developed to deliver the highest quality food consistently. You will support the Head Chef to ensure the highest standards of food preparation and delivery as well as effective communication across all sections of the kitchen and front of house. As Senior Sous you will support with menu development and creation ensuring seasonality of ingredients. In addition you support in ensuring all targets are met in relation to payroll and food costs and the brigade comply with all health & safety and food safety policies and procedures.

The successful candidate will:
• Currently be a Senior Sous or experienced Sous Chef looking for their next promotion
• Have experience of working in high quality, busy destination restaurants
• Be passionate about delivering high quality, seasonal food
• Be able to effectively manage, motivate and lead a team
• Have the ability to develop a team enhancing the skill level of the brigade
• Be a clear communicator with the ability to develop a team enhancing the skill level of the brigade
• Understand fully how to effectively cost a menu and achieve food margin targets
