Much like how the by CHLOE concept aims to share delicious, plant-based food that fuels and energizes without compromising flavor, taste or satisfaction, we expect that our Sous Chefs also never compromise. This position serves as the primary resource to help lead the team, and execute the highest quality of items for our locations. The sous chef will be responsible to hold the team to by CHLOE. standards and specifications in accordance with production requirements, while maintaining a safe and sanitary work environment.
-Comply with and fully understand the laws and regulations regarding licensing, food safety, health & safety, hygiene and sanitation.
-Maintain a high level of motivations and team spirit; liaise with all pastry production staff within the area to ensure a correct and professional operation is conducted.
-Ensure that all perishable items are stored quickly and efficiently thus avoiding unnecessary waste.
-Be aware of new items to add to the sheets for preparation; teach-out to the team.
-Label, date and rotate items stored in all pastry productions.
-Communicate effectively to pastry team in regards to inventory, product pars, and production levels.
-Manage day-to-day operations, and monitor that the team members are adhering to the following expectations:
• Following portion controlled recipes and garnish requirements.
• Adhering to the strict policies regarding personal grooming and hygiene.
• Ensuring at the end of the work day that all areas are fully cleaned down.
• Ensure that all desserts and product are consistent
• Finish and decorate cakes and pastry items
• Properly store and handle dessert products
• Prepare and apply frostings and icings, fruit fillings, custards, and mousse
-Monitor, report and take action on any accidents that occur.
-Immediately identify and report for repairs any equipment that is damaged or faulty.
-5+ years of pastry experience; 2+ years in a leadership role
-High-volume, production experience is strongly preferred
-Ability to lead and mentor a team.
-Ability to work varied shifts, including weekends and holidays.
-Able to effectively communicate in English, in both written and oral forms.
-A passion for food and restaurant operations; interest in vegan/healthy lifestyle is a plus, but not required!
