Manages wine programs for divisional restaurants including purchasing wine, analyzing cost control, creating and developing wine menus, and provides wine training and development for teams at divisional restaurants.

Essential Functions

  • Supervise wine purchasing and ordering for all divisional restaurants
  • Develop wine menus with partners and general managers for all divisional restaurants as well as conduct wine tastings for partners and general managers to select new products
  • Provide wine training (for example, wine service, sales techniques), ongoing education and development to front of house service teams and Bar Managers, including but not limited to coordinating with training team, vendors and purveyors to schedule and host new menu roll outs, wine tastings, etc, and assist as needed in updating wine training materials
  • Accurately record and account for all items ordered, process payments, and balance all sales/receipts
  • Analyze all wine sales by restaurant on a daily, weekly, monthly and annual basis to optimize sales and profit and plan annual wine budget
  • Comprehend and utilize all wine ordering systems including but not limited to beverage order guides, purchase orders and online systems (for example, Micros) and update information as needed
  • Possess certified sommelier credentials (for example, Court of Master Sommelier, International Sommelier Guild or Wine & Spirit Education Trust)
  • Available to work a variety of hours, days and shifts, including evenings and weekends
  • Safely and effectively use and operate all necessary tools and equipment
  • Ability to effectively communicate in order to perform and follow job requirements in written and spoken direction
  • Ability to multitask calmly and effectively in a busy, stressful environment
  • Work in a confined, crowded space of variable noise and temperature levels
  • Able to move and lift up to 10 pounds, frequently move and/or lift up to 25 pounds, and occasionally move and/or lift up to 50 pounds
  • Ability to stand and walk for an entire shift and move safely through all areas of the restaurant, which may include stairs, uneven or slick surfaces

 Key Responsibilities and Duties

  • Ensure the overall guest experience exceeds expectations and anticipates guests’ needs
  • Act as a divisional expert to advise restaurant managers in using wine ordering systems
  • Attend designated meetings and educational events including wine seminars (industry-wide and LEYE), LEYE informational seminars, and restaurant-level management meetings
  • Organize and conduct periodic onsite and offsite events including but not limited to wine dinners
  • Collaborate with restaurant management to ensure wine is organized, maintained and restocked in designated areas and maintain security of all inventories including dead wine inventory 
  • Collaborate with partners and GMs in planning annual wine budget and accurately record and account for all items ordered, process payments, and balance all sales/receipts
  • Maintain professional relationships with purveyors, and must not accept gifts or cash in return for wine or liquor orders
  • Respond knowledgeably to questions regarding the restaurants and menus
  • Assist management team in creating employee incentives and motivational contests to increase wine sales
  • Collaborate with restaurant GM and management to monitor and address individual employee performance through recognition and coaching, and assist management team with documentation and discipline, when appropriate
  • Assist divisional sommeliers and service teams with selling and serving wine, as needed
  • Promote teamwork as well as lead by example  
  • Use tact and good judgement when dealing with guests, employees, and vendors and respond with patience and courtesy
  • Understand and follow the food allergy procedure and special orders/restrictions
  • Proficiency in the use and operation of all necessary tools and equipment, including the POS system and Frequent Diner, Gift Card and Credit Card terminals
  • Comply with all safety and sanitation guidelines and procedures
  • Follow all rules, policies, procedures and conditions of employment, including those outlined in the Employee Handbook
  • Successfully complete alcohol awareness training
  • Other duties will be assigned as needed
