City Winery brings what we do best in the West Loop to the Riverwalk. The menu features our top selling items from the West Loop location. In addition, wine is served through a unique tap system to showcase the company's commitment to sustainability.

Position Summary: Our seasonal sous leads an effective and well-prepared kitchen into and throughout service. Strong Expo skills required. Our management provides a professional and non-hostile work environment for all employees, promoting growth through on-the-spot coaching and clear objectives within individual roles. The seasonal Sous ensures full menu preparation, execution, and presentation that meets the standards of our Chef and brand consistently while maintaining a safe and sanitized kitchen through standards that meet the requirements of local governing institutions and house procedures. The Riverwalk is an ever-engaging and challenging project that calls for flexible, creative, and resourceful leadership.

Daily Operations:
-Ensure each and every member of the team feels he/she is part of the company vision
-Drive employees to participate in and achieve our end goal: providing a highly hospitable, creative and consistent experience
-Create daily production list for all positions prior to their arrival and hold team accountable
-Ensure all stations are fully stocked before, during and after shift
-Check work stations periodically to ensure compliance with health and safety protocols
-Verify kitchen staff follows all recipes and practices portion control standards set by the Chef -Ensure that staff maintains a philosophy of cleaning-as-you-go and organization at all times -Place purchase orders in a timely manner and communicating with management when needed
-Practice proper receiving protocols including invoice handling
-Assist in the hiring, training and discipline of all kitchen personnel
-Assist in creation and maintenance of kitchen employee files including new hire paperwork completed with office management, documentation of any disciplinary action, etc
-Participate in management dialogue through meetings and emails; assume full leadership duties for the department in the absence of the Chef
-Manage staffing pars throughout a shift with a focus on labor control
-Control food costs by monitoring portion control, pilferage and waste
