Description
City Winery seeks a dedicated kitchen professional with positive team leadership skills, as well as a commitment to upholding brand standards to lead over our culinary operations. A skilled motivator guiding the team through the execution of both restaurant and event dining in a high quality, consistent manner, over multiple events under one venue. A strong manager over daily operations in the kitchen, communicating with various vendors for food and equipment orders, as well as maintaining and raising the profit margins through proper ordering, inventory and labor controls. Upholding core cultural values throughout the culinary department.

The Requirements:

• Holds a formal degree in the culinary arts or proof of equivalent experience, plus minimum 5 years’ experience running a high-volume kitchen environment (300+ covers)
• Ability to monitor and manage food production through proper purchasing practices and inventory controls as they relate to restaurant and banquet service
• Monitor team’s execution of culinary presentations of core recipe guide through high-quality standards in a high-volume operation
• Oversee proper equipment operations and maintenance
• Ensures proper safety and sanitation in the kitchen as they relate to local health and safety standards
• Follow proper management of the culinary department financials through thorough invoice coding and handling, plus physical counts of inventory
• Manage relationship with local purveyors & vendors in professional manner
• Control food and labor costs in a high volume, catered cooking environment by meeting company pars
• Practice proficiency in menu development and pricing as well as the development of the culinary team’s consistent execution of all core menu items
• Practices strong communication, leadership and time management skills
• Ability to manage in a diverse environment with a focus on client and customer services
• Maintain a healthy balance of relations between all collaborating departments holding all personnel to our core cultural values
