JOB TITLE:  BOH Field Trainer                                                                                  DEPARTMENT: Operations

REPORTS TO: Sr. Director of Learning & Development                                     UPDATED:  May 2022

FLSA: Non-exempt


SUMMARY OF POSITION:   The Back of House “BOH” Field Trainer supports Farmer Boys Operations by ensuring that the food we serve always meets or exceeds our standards of excellence. The BOH Field Trainer will be called upon to assist with any Corporate Restaurants training requirements in addition to New Store Openings. While they report to the Sr. Director of Learning & Development, it is expected that this person partners with the restaurant Kitchen Managers “KM” and General Managers “GM” for setting the expectation for all kitchen team members to work as a team and to maximize productivity.  The BOH Field Trainer is the embodiment of Farmer Boys standards, whether it is cleanliness, organization, food safety, adherence to specs, or food quality.  They are also responsible for the speed and accuracy of the team. The BOH Field Trainer must be able to work in partnership effectively with limited supervision and demonstrate leadership to motivate others. ESSENTIAL DUTIES AND RESPONSIBILITIES:  

  • This is a leadership position responsible for the development and retention of managers, and the operation of company restaurants to support critical factors in our success, food quality, and kitchen performance.
  • The BOH Field Trainer is required to drive to different locations Including occasional overnight travel as needed.
  • Train and support our managers on how to manage our food quality standards by consistently monitoring the temperature of hot food as well as ensuring that our cold food is stored according to standards
  • Responsible for maintaining food safety as the highest priority through coaching.
  • Communicate to Kitchen Manager or General Manager the repairs needed to the kitchen equipment.
  • Develop and cross-train team members.
  • Instill a sense of urgency into all KMs and kitchen team members to safeguard speed of service standards.
  • Assist with training the layout of a daily workstation to maximize our productivity  
  • Teach and coach cleanliness standards.
  • Partner with KMs, and GMs on any special requests relevant to the growth of the business.
  • Assist with training on how to manage the day-to-day operations.  
  • Nurture understanding and model our Farmer Boys Mission and Values.  
  • Competence in the execution of leadership, meal periods, rest periods, and food safety laws.
  • Provides feedback and coaching on the overall organization of the back of the house.
  • Provide coaching to maintain our cleaning program as written.  
  • Train how to keep consistent and accurate records for temperature logs, critical control points, etc.
  • Train best practices of BOH deployment to maximize productivity.
  • Train best practices to minimize waste and improve food cost.
  • Provide coaching on opportunities for food quality.
  • Training inventory rotation and product storage standards.
  • Train all managers and kitchen team members to follow Farmer Boys prep procedures, recipe adherence, and cooking procedures.
  • Manage and train New Restaurant Opening “NRO” team members when on ground at an NRO.

                                                                                                                                

KNOWLEDGE, SKILLS, AND ABILITIES: 

  • Ability to manage, train and motivate a diverse team member base
  • Strong interpersonal and conflict resolution skills.
  • Ability to work a flexible schedule, including early mornings, evenings, and weekends to be able to observe different shifts and assist in NRO support.
  • Ability to handle a fluid environment of simultaneously coordinating a wide range of activities and recommend appropriate solutions to restaurant challenges.
  • Knowledge of computers to fulfill management training responsibilities
  • Thorough knowledge of our recipes and food prep procedures to effectively manage the standards with kitchen team members.
  • Ability to coach and support cost control efforts related to the cost of goods and labor.
  • Develop mutual respect among team members to ensure success and foster excellence.
 

WORK REQUIREMENTS, EXPERIENCE, AND EDUCATION: 

  • The minimum age requirement is 18.
  • Prior kitchen leadership experience preferred or demonstrated proficiency in kitchen execution and leadership.
  • A culinary degree is a plus.  A combination of practical experience and education will be considered as an alternative.
  • Servsafe Certification

The physical demands described here are representative of those that must be met by an employee to successfully perform the essential functions of this job.

 

While performing the duties of this job, the employee is regularly required to talk and hear; the noise level in the work environment can be loud. This position is very active and requires standing, walking, bending, kneeling, stooping, crouching, and crawling for up to 8 hours a day. Occasional ascending/descending ladders. The employee must frequently lift and/or move items up to 50 pounds. Specific vision abilities required by this job include close vision, distance vision, color vision, peripheral vision, depth perception, and the ability to adjust focus. Occasionally use a computer and keyboard. Ability to travel to different locations to successfully execute on-the-job training for BOH Team Members.

Weekly Schedule:

Traveling between Corporate locations as needed. In addition to travel to NRO locations, occasional overnight travel may be needed.
