JOB TITLE: Food Safety & Purchasing Specialist                                   

REPORTS TO: VP Supply Chain & Food Safety                                               

DEPARTMENT:  Supply Chain & Food Safety

Job Summary

The Food Safety & Purchasing Specialist plays a critical role in safeguarding our commitment to our Guests which is serving delicious, flavorful food, fresh-cooked, made-to-order meal every time. The incumbent will proactively develop, manage, and maintain the food safety program, conduct audits with food vendors, and maintain company inventory management systems. The candidate will be working with cross-functional teams with a key focus on outlining and optimizing operations processes and procedures for the R&D. Effective communication and follow through with reporting is essential to aid in the purchasing decision making. Essential Job Functions                                                                                                                              

Food Safety Program

Proactively develop, manage, and maintain Food Safety and Quality Assurance processes

  • Consult, coach, and train restaurant operators and franchisees on the latest food safety, health, and sanitation practices
  • Facilitate food safety training including ServSafe Certifications, HACCP plans, allergen training, chemical training, and basic food safety standard.
  • Prevent failures and mitigate food safety and sanitation risks to the consumer or the brand.
  • Provide guidance and assistance to Farmer Boys restaurants to meet food safety regulations and eliminate/minimize potential food safety risks
  • Work with legal to research, maintain, and stay up to date on knowledge in emerging labeling/regulatory issues that may affect Farmer Boys restaurants

 - Coordinate and sustain the restaurant food safety audit process.

  • Monitor and oversee third-party audit vendor
  • Monitor restaurant food safety and quality assurance audits
  • Review and monitor restaurant corrective action plans
  • Audit and provide training to high-risk restaurants
  • Function as a backup resource for conducting restaurant Quality Assurance brand audits

 - Central point of contact for regulatory agencies, units, and the corporate team regarding food safety concerns

  • Work with regulatory agencies to ensure adherence and compliance.
  • Follow up on guest complaints and questions
  • Follow up on restaurant complaints and concerns
  • Function as key liaison with associated regulatory agencies

Ensure highly disciplined compliance with all regulatory and company-defined food safety and sanitation standards, systems, procedures, and practices to guarantee the absolute wholeness of our products.

  • Vendor certification
  • Distributor Inbound inspection
  • Microbiological testing when needed
  • Traceability (coordination and auditing)
  • Recalls/Withdrawals (coordination and system auditing)
  • Foreign matter in ingredients
  • Incidence analysis/Identify incident trends
  • Daily and periodic sanitation (coordination and system auditing)HACCP Program (coordination and system auditing)
  • Pest Control (coordination and system auditing)
  • Food safety and quality system training

R&D

Identify and mitigate HACCP CCPs in new menu development
- Provide ingredient yield analysis for food cost calculations

- Ensure existing food ingredients adhere to outlined specifications through periodic quality checks


Food Vendors

- Conduct food safety audits at vendor facilities
- Follow up on food safety concerns and incidents with food vendors

- Conduct lab analysis as needed


 Purchasing

- Liaison to field operations
- Maintain daily outage & shortage report

- Effective follow through with delayed deliveries report and delayed delivery follow up


 Systems

- Purchasing & inventory management for Data Central
- Distributor Order Guide Management
- Inventory management for units, distribution & promotions
- Forecasting
- Other duties as assigned

 

Education and Experience

- Bachelor's degree in food science, nutrition, product development, or related field preferred
- Minimum of two years of related experience in food safety, & sanitation or equivalent
- Knowledge of laws and regulations related to Food Safety & Sanitation: Pest Control, HACCP Guidelines, Vendor & Supplier Audits
- ServSafe Certified
