Description

Creating Texas-sized culinary experiences is the mission of a Sous Chef at Haywire. The Sous works with the Chef De Cuisine (CDC) to ensure a flawless experience from inception to execution. They drive top and bottom line restaurant performance by executing a menu known for its sophisticated cowboy cuisine. The Sous is a head coach that knows how to get the best out of their team and coordinates action to achieve victory. They have a heightened attention-to-detail and communicate continuously with the leaders and team around them.  They understand that creating a plan, then executing the plan is the path to smooth and successful shifts. They celebrate team wins and address opportunities, always focused on creating the best experience possible for their team and guests. The ideal Sous Chef has 2+ years of high-volume, steak-house restaurant experience.

Culinary Leader

  • Assist the CDC in creating, presenting and adjusting the Haywire menu based on research around a variety of traditional and new Texas culinary influenced trends
  • Innovate using the latest techniques, equipment, and ingredients to stay ahead of culinary trends and experiences relevant to the Brand
  • Partner with the CDC to create and execute special event menus to deliver extraordinary experiences
  • Ensure line and prep cooks are experts with ingredients, preparation, taste and presentation of recipes and menu items they impact
  • Consistently monitor food preparation and presentation to ensure perfect menu items leave the kitchen each shift

People Champion

  • Assist in hiring, training and retaining the best talent in the industry
  • Ensure team members have the knowledge, tools and resources needed to be successful in their roles
  • Create an energetic culture that draws new team members in and allows them to be their best at what they do
  • Hold entire team to the highest of standards through fair, consistent coaching and feedback
  • Develop strong leaders in the kitchen that maintain culinary, sanitary and cleanliness standards as rigorous as the Sous'
Quality Authority

  • Evaluate ingredients regularly to ensure the highest quality is consistently attained
  • Approve the requisition, purchase, storage and inventory of products and other necessary items, both food and non-food related
  • Accountable for the use of Haywire standard recipes and techniques for food preparation, execution, and presentation to assure consistently high quality
  • Develop and maintain high standards that safeguards all food handler work practices, while increasing the team's knowledge around safety, hygiene, security and accident prevention
Business Partner

  • Maintain measures for controlling food costs and exercising portion control 
  • Attend all Haywire Culinary Leadership meetings, preparing to present culinary operations related updates, needs and issues impacting the business 
  • Maintain the highest level of cleanliness and preventive maintenance of all kitchen equipment and fixtures, communicating R&M issues before they become worse.
  • Ensure proper shift deployment is executed on a consistent bases and communicating as needed to make necessary adjustments
