Kioku by Endo is looking for a committed Chef de Partie to join our talented brigade in the heart of London.

Kioku” means memory in Japanese—this restaurant is just that: a mosaic of moments, flavours, and experiences curated by Chef Endo Kazutoshi, a third-generation sushi master. From his roots in Yokohama to the fine dining kitchens of Tokyo and Spain, Endo-san’s journey informs everything we do—fusing Japanese precision with Mediterranean warmth.

Located at The OWO, with views over Trafalgar Square, Kioku is more than a restaurant—it’s a celebration of craftsmanship, culture, and memory.

The Role:

As Chef de Partie, you’ll take ownership of your section and support the smooth running of daily kitchen operations. Working alongside a passionate, skilled team, you’ll prepare and present dishes that honour exceptional Japanese produce and technique while embracing creativity and care.

You’ll be expected to understand and respect the ethics and discipline of Japanese fine dining, and to bring that mindset to every service.

  • Experience in a similar role within a fine dining or Michelin-recommended kitchen.

  • A genuine passion for Japanese cuisine, ingredients, and culinary philosophy.

  • Strong organisational skills and the ability to manage a section with accuracy and consistency.

  • Willingness to learn, improve, and contribute positively to a respectful and high-performing team.

  • A calm, focused approach and commitment to delivering exceptional quality.
