Description
As a prep cook at Lucques, you are responsible for showing up at your scheduled shift
on time and in a clean, full uniform. This uniform must include a hat, chef shirt and
apron. In addition to this, you must have an up to date food handler’s card and
follow proper sanitation guidelines at all times when working in the kitchen.

Requirements as a prep cook (not limited to and subject to change)
You will be in charge of completing your daily prep list each and every shift. In
addition to completing your prep list, you are responsible for helping check in and
putting away all deliveries. This means taking delivered product out of the box, putting
in a bus tub, lexan or herb bin and labeling with the name of the product. If you are scheduled
at 9am on a market delivery day, you are responsible for prepping the walk-in for the
market (consolidating) and putting away all market product.

You are also responsible for maintaining a clean station, consolidating as you go
throughout your shift, and keeping all walk-ins and reach-ins clean, while following
FIFO (first in first out). As a member of LucquesLucques opened in 1998 to instant international acclaim.
The first restaurant opened by the duo of 3 time James Beard Award winning chef Suzanne Goin (Who's Who of Food & Beverage in America 2017, Outstanding Chef 2016, Best Chefs in America - California 2006, Best Cookbook - Cooking from a Professional Point of View 2006) and James Beard Foundation’s Outstanding Restaurateur of the Year 2018 Caroline Styne.
Originally the rustic carriage house of the Harold Lloyd Estate, Lucques’ decor of brick, wood beams, garden setting and wood-burning fireplace provides a warm and intimate setting. Goin and Styne have made Lucques a classic in the Los Angeles dining scene, emphasizing simply delicious and indulgent market-driven ingredients, guided by principles of sustainability, and served in a comforting and gracious setting of hospitality.
Each week Lucques presents Sunday Suppers - ever changing three course prix fixe menus showcasing the best of seasonal produce form our local Farmers Markets. This night was the inspiration behind Goin’s James Beard Foundation award-winning cookbook, Sunday Suppers at Lucques., we promote and environment of
working as a cohesive team, helping out your other team members when they need
help and, in turn, they will help you. At the end of your scheduled shift, you must
scrub down your station and check out with the chef on duty to make sure your prep
list completed.

Prep Cooks will attempt in every way to further the interests of the restaurant. This
includes those items listed specifically above, but also the myriad of small details
that arise in a daily work environment. The Prep Cook understands and accepts that
this vigilance should be not only physical and mental, but in attitude as well.
Wherever specific goals or tasks are involved, the Prep Cook must make every effort
to attain or complete them, and to report to his/her superior with the results and
any comments or suggestions that might improve this process in the future.
Work fluctuates between indoors and outdoors. The employer will attempt in every
way to maintain a safe, healthy and pleasant working environment but should the
employee notice any potentially unhealthy defect, condition, or situation, he will be
expected to notify his superior immediately. Employee is frequently exposed to
heat, cold, temperature change, humidity, odors, vibration and noise.
