Barbacks are the engine of the business. Your role is behind the bar being a team player who understands that speed & efficiency in stocking all bars, speed rails, back bar displays, fruit replenishing, cleaning, polishing and stocking all glassware so the bar runs like clockwork.

Service duties:

  • To have a sociable, enthusiastic and welcoming approach to hospitality by providing a unique experience to our guests.
  • To respond to guest requests for information about the company or directly to the relevant person.
  • To maintain and encourage a good working relationship with your colleagues and all other departments.
  • Work as part of a team to maintain the highest level of cleanliness within your bars, front & BOH areas 
  • To provide operational support within other departments as and when necessary or requested.
  • Awareness of our guests’ safety and property
  • Display excellent knowledge of cellar products and functioning of all relevant equipment i.e. glass washer, changing kegs, changing post-mix
  • Display proactivity and initiative, preventing problems before they arise
  • Constant communication with bar staff and supervisors
  • Be in your section ready to work at your start time
  • Communicate any 86 items or maintenance problems to your supervisor/manager
  • Ensure bin area/alley is immaculate and sorted properly at all times.
  • Fire escapes being kept clear at all times
  • To have in-depth knowledge about the venue including postcode/phone number/entertainment, the Columbo group and the local area so you are able to answer any on the spot questions from guests. 
  • Take responsibility for tasks delegated by management & communicate issues to supervisors/managers
  • To carry out any reasonable request made by management.
  • To be ready to start work when your shift starts, not arrive at that time
  • Sign out only when approved by your manager/supervisor
  • To remember that you are a representative of the company and to behave accordingly at all times whilst on company premises.

Behaviours expected in Service Duties – Punctual, Productive, Focused, Reliable, Prepared and a Team player. It is key to be proactive and give 100% during your service duties. You need to look great for every shift.


Set up/breakdown duties:

  • To follow set-up, running and closing duties including completing checklists daily
  • To have full knowledge of 86’s, product items running low and to inform your supervisor/manager at the beginning of each shift or as they arise 
  • To ensure that any departmental cleaning jobs are followed every day to the highest standard

Behaviours expected in Set up/Breakdown duties – Energetic, Organised, Eager, Dedicated and Resilient. We expect to see a real sense of urgency and determination in the efficiency of the set-up and breakdown.


Stock and wastage responsibilities:

  • To accurately record stock deliveries
  • All breakages to be reported to your supervisor/manager immediately to be recorded
  • Record any fobbing, wastage, spillages etc

Behaviours expected in Stock and Wastage Responsibilities – Honest, Strong Communicator, Genuine and have good integrity.
