Description

San Francisco Proper is looking for an experienced Beverage Director.

When elevator doors open 120 feet above Market Street at San Francisco Proper Hotel to unparalleled views of the City by the Bay, you’ve entered a new social playground. Charmaine’s is the rooftop bar and lounge San Francisco had been waiting for, where the energetic culture and chic of a European terrace meets the laid-back “California cool” lifestyle. Cocktails by Josh Harris and Morgan Schick of BV Hospitality match the romance of the setting, featuring the vibrant flavors, original combinations, and unique ingredients for which the duo is known.

San Francisco Proper’s new Executive Chef is Jason Fox, former chef/owner of Michelin Star restaurant Commonwealth. Chef Jason Fox leads the hotel’s three unique dining outlets: Villon, Charmaine’s, and La Bande. From fine dining to elevated bar snacks, Chef Fox brings his extensive knowledge of progressive California cuisine to the property and draws on local ingredients and worldly flavors.

This position requires exceptional leadership and vision. The Beverage Director is responsible for fostering and developing an exciting, positive, results-based environment for all outlets. Must possess strong personal organization, genuine hospitality, and care for staff. Understands and implements contemporary luxury/lifestyle standards.
Responsibilities
• Serves as a spokesperson for the Proper Hospitality brand, upholding its reputation and leading by example
• Responsible for creating and maintaining a positive working culture for all colleagues
• Actively manage the F&B operations, quality of service and interact with guests and staff during bar operations
• Follow-up with unsatisfied guests and handles complaints
• Drives revenue and financial goals and implements cost control systems
• Coordinate daily pre-shift meetings with the F&B team
• Assist with creating and maintaining procedural protocol for F&B Operations
• Maintain daily set up and breakdown in line with Kelly Wearstler defined aesthetic
• Assist with Special Events coordination, set-up and management
• Maintain compliance with departmental policies, procedures, and standards
• Assist with completing daily, weekly, and monthly management administrative duties including operations reports, financial documentation, guest correspondence, human resources / staff management paperwork, operations evaluations, standard operating procedures, safety and sanitations checklists, ordering and inventory documentation, and PR/marketing tasks.

Strategy and Partnerships
• Partner with alcohol vendors and suppliers to develop long term collaborations that enhance Proper programming.
• Ensure beverage program is competitive with market, conducting comp sets, pricing evaluation, menu.
• Work directly with Marketing to strategize on Proper events including concepts, menus, activities, pricing and offerings.
• Work with ‘Bon Vivants’ and Marketing to develop annual event calendar that ensures sponsorship by our beverage partners.
• Procure appropriate vendors for Proper events and entertainment including DJs, entertainment and special activities.
• Develop strong partnership with community to further increase brand and product awareness.

Programming
• Direct and manage programs at Proper from concept to special menus and activities, to execution (Brunch, Veuve, Star Light).
• Orchestrate events that create awareness and interest in the brand and target guests and clients.
• Work with Sales and Marketing team to create and sustain public relations, advertising and promotional programs.
• Charmaine’s Programming Calendar.

Operations
• Build and curates all beverage menus.
• Understand and control beverage program including inventory, bar pars, portion control, cost control, beverage potentials, and sales mix analysis for beverage.
• Responsible for ordering and inventorying entire beverage program including N/A, dry goods, garnishes and syrups.
• Creating and maintaining accurate and effective bar requisitions by outlet, and ensuring all product is accounted for in systems.
• Regular audits of Beverage to ensure pricing, vintage, supplier and case drop data is accurate and timely.
• Building Beverage so property can see beverage cost in real time, by cocktail, outlet and month to date sales.
• Work with Special Events to build tiered bar packages including house wines, house cocktails, event enhancements (tastings).
• Overseeing beverage prep/ ordering for BEOs.
• Collaborate with co-department head to ensure proper hiring, training and scheduling of staff, particularly bar staff.
• Monitor bar sales, buy backs, cash handling.

Financial
• Work with Director of Outlets to develop and recommend the FB budget, concepts and objectives and manage within those plans.
• Accountable for meeting the monthly beverage cost budget by maximizing pricing with vendors, recording waste, and monitoring pour costs.
• Verify successful performance by increasing revenues, controlling expenses and meeting budget and sales goals.
• Manage bar budget and beverage cost to meet financial goals.

Skills/Knowledge Required:
•Luxury/Lifestyle Hotel experience or equivalent
• Strong food, liquor, wine & beer knowledge required
• Strong written, verbal, and non-verbal communication skills
• Proactive attitude with strong organizational and time management skills
• The ability to motivate and inspire others to work cooperatively to achieve a designated goal
• Flexible schedule - Willing and able to work shift duties that may include evenings, nights, weekends and holidays
• Strong problem-solving skills

Education
Bachelor’s Degree preferred

Experience
Over 5 years of hospitality experience, and 2 years of previous experience in a similar position preferred

Licenses or Certificates: ServSafe & TIPS Preferred
