Description

PRIMARY OBJECTIVE OF POSITION

To ensure that all the staff is practicing good hygiene practices (GHP) throughout the production in Central Production Kitchen and all the other outlets.

TASKS, DUTIES & RESPONSIBILITIES

1)      Assist the Hygiene & HACCP Manager with the day to day requirements of the Radisson Blu Hotel, Doha.

2)      Be responsible for maintaining the highest level of Food Hygiene and Safety standards in the hotel.

3)      Work mostly in the production areas, monitoring that food safety procedures are being followed.

4)      Ensure proper documentation and records are completed by the responsible parties.

5)      Problem solving as relates to food and safety issues.

6)      Help maintain the ISO 22000:2005 certification in the F&B Department such as food production area and all areas involved in the Food chain.

7)      Assist with enforcing food safety program and procedures, GMP policy and personal hygiene policies.

8)      Perform and record Food Safety inspection and report any irregularities and take proper corrective action.

9)      Responsible for quality and safety checks for all raw and prepared food products.

10)  Verify and communicate to appropriate departments any findings as it relates to food safety and/or quality issues.

11)  Report and assist with correcting any unsanitary conditions in food preparation and food storage/receiving area.

12)  Report any required maintenance/replacement of food preparation equipment, surfaces and tools.

13)  Assist to maintain, and update all records, manuals, training procedures, product specification books.

14)  Assist with preparation for any and all food safety audits.

15)  Maintain cleanliness and sanitation of all food premises.

16)  Conduct supplier’s audits, respectively fill the supplier audit reports and evaluate suppliers.

HEALTH AND SAFETY

·         Ensures that all potential and real hazards are reported and reduced immediately.

·         Fully understands the hotel’s fire, emergency and bomb procedures.

·         Ensures that emergency procedures are practiced and enforced to provide for the security and safety of guests and employees.

·         Ensures that employees work in a safe manner that does not harm or injure self or others.

·         Stimulates and encourages a general awareness of health and safety in tasks and activities carried out within the department.

·         Follows hotel regulations and adheres to existing laws and regulations.

·         Anticipates possible and probable hazards and conditions and either corrects them or takes action to prevent them from happening.

·         Ensures that the highest standards of personal hygiene, dress, uniform, appearance, body language and conduct is maintained by all employees in the department.

QUALIFICATIONS , EXPERIENCES & COMPETENCIES

·         Should be a HACCP/Food Safety Level 3 trained.

·         Applicants should possess relevant educational qualification.

·         Work experience of at least 3 years in similar field is needed.

·         Experience in inspecting Food premises, write reports, and fill the check-lists.

·         Specialized qualification in food safety and hygiene will be an advantage.

·         Should possess a track record of food safety and hygiene within the food industry.

·         Ability to liaise with all departments.

·         Should possess excellent communication skills.

·         Very good computer skills.
