Description
Summary of Position

Accurately and efficiently cook meats, fish, vegetables, soups, salads, and other food products; as well as prepare and portion food products prior to cooking. Also, perform other duties in the areas of food and final plate preparation including plating and garnishing of cooked items and preparing appropriate garnishes for all menu item plates.

Essential Functions of the Job

• Prepares a variety of meats, seafood, poultry, vegetables and other food items for cooking in broilers, ovens, grills, fryers and another kitchen equipment
• Assumes 100% responsibility for the quality of products served
• Knows and complies consistently with our standard portion sizes, cooking methods, quality standards, and kitchen rules, policies and procedures
• Portions food products prior to cooking according to standard portion sizes and recipe specifications
• Maintains a clean and sanitary work station area including tables, shelves, grills, broilers, fryers, pasta cookers, sauté burners, convection oven, flat top range, and refrigeration equipment
• Prepares item for broiling, grilling, frying, sautéing or other cooking methods by portioning, battering, breading, seasoning and/or marinating
• Follows proper plate presentation and garnish set up for all dishes
• Handles, stores and rotates all products properly
• Assists in food prep assignments during off-peak periods as needed
• Closes the kitchen properly and follows the closing checklist for kitchen stations and assists others in closing the kitchen
• Work with a team of cooks to do portion prep work for other shifts when needed
• Monitor product freshness and rotate out an old product based on a schedule created by the restaurant
• Follow sanitation guidelines set forth by the Health Department
• Comply with nutrition and sanitation guidelines
• Lifting and moving equipment to and from workstations, stove, and refrigerator
• Be available to fill in as needed to ensure the smooth and efficient operation of the restaurant as directed by the Chef or immediate supervisor
• Performs other related duties as assigned by the Chef or manager-on-duty

Qualifications

• High school diploma or equivalent is desirable
• Training from a culinary school is a plus
• Proven experience as a line cook
• Food Handlers Certificate required
• Knowledge of health and safety rules in a kitchen
• Manual dexterity able to operate cutting tools and kitchen utensils
• A team player with excellent communication skills
• Patient with the ability to stay positive under pressure

Working Conditions

• Work schedule may vary between early morning to late evening, weekends and holidays
• Shifts range from 6 – 8 hours and you may at times be asked to work overtime

Physical Requirements

• Able to work in a fast paced and changing environment.
• Able to reach, bend, stoop and frequently lift up to 50 lbs.
• Able to work in a standing position for an extended period of time (up to 10 hours)
• Carry trays of food that may weigh up to 15 pounds
• Able to work in cold/hot conditions
