Description

We are looking to recruit an experienced Development Chef, to be responsible for all aspects of menu development, food production and kitchen management, reporting directly to the Chef Director To ensure we continue to manage, maintain, and train the culinary standards and recipes, while also focusing on consistency and development of culinary team

Potential candidates for the role of Development Chef must be able to demonstrate a stable and progressive background, to their current role as a Development Chef, gained in top quality restaurant from all over the world coupled with a sound knowledge of Japanese cuisine

The Development Chef will Oversee, and ensure the culinary team present a unified group and that this provides a highly efficient and effective service while ensuring that contemporary Japanese cuisine and etiquette is adhered to, the candidate will value inpuit from others and stimulate new ideas and perspectives from all team members.

The ideal candidate will Communicate effectively with senior management to ensure transparency on all matters Keep focused on the food development aspect and communicate with the Chef Director on all ideas. They will be able to collect new recipes & maintain the main recipe master book, create the specs in a clear and orderly way. Develop and maintain a seasonal culinary calendar

The Role will require you to know the kitchens inside out and you must be able to operate the kitchen at any time, in the absence of the local Executive Chef/Head Chef

Analysing the menu data on a weekly basis to ensure that the food being developed is in line with customer expectations and with in the scope of the business.

Take a lead role with-in the business and instill quality training of the kitchen keeping the employees motivated and up to date with their skills and knowledge in Japanese and non-Japanese products.

The ideal candidate must have:

  • Knowledge in Fermentation
  • Classically trained and has an advanced knowledge of cookery techniques 
  • Has a genuine interest in using the best ingredients 
  • 6 years restaurant experience
  • Minimum 4 years Michelin star experience
  • Eager and has ambition to develop within the group
