Executive Chef

This position is a hands-on job. An Executive Chef for Sixty Vines will be a working Chef, always training and developing his or her teams in the field. He or She will be integral in new rollouts and recipe adherence on a daily basis. The Executive Chef is the primary point and leader in delivering uncompromising food quality, strong cost controls and leadership of the culinary team.

Job Duties

•       Partnering with General Manager and Director of Culinary, executing, and driving the culinary direction through a deep understanding of the brand DNA of Sixty Vines

•       Ownership of the food menu including food cost and human resources to execute

•       Deployment of new menu items and menu roll outs regulatory and compliance requisites

•       Product quality, execution, and ideation of new menu items or ways to improve existing recipes

•       Continuing education and research in like food technique to remain sharp and proactive, ahead of the curve

•       Push the guest experience forward through food and wine pairings and surprising new flavors

•       Creating Wine Country Cuisine that supports the brand’s objectives

•       Develop the foundation of the Sixty Vines culinary future through training and development of the next generation of Chefs

•       Influence the individual restaurants through hands on training and collaboration. Hold the culinary team to high level of accountability for results

•       Partner with the purchasing department to ensure the best possible products at the best possible prices

•       Provide leadership in the areas of culinary safety, sanitation, and product education

Profile                                                                                                

•       3-5 years of the following: culinary management, menu design, responsibility for menu rollouts & implementation of kitchen systems and design

•       Considerable focus on California Wine Country and or Mediterranean Cuisine throughout career

•       A reputation as a leader, motivator, and manager with proven ability to successfully develop and lead teams

•       The ability to learn quickly and collaborate with others

•       Strong understanding of restaurant systems

•       High level of personal motivation/ambition and enthusiasm/energy, an entrepreneurial sensibility, high energy with a focus on detail

•       Live within reasonable driving distance to one of our current restaurants
