Description
The Soho Grand Hotel is looking for a motivated and passionate Sous Chef to join our team. This individual is organized, has a deep understanding of food and beverage operations, and is able to lead and communicate clearly with back of house. All candidates must have a qualifying certificate in food protection issued by New York City DOHMH.

Responsibilities include, but not limited to:
• Leading the back of house kitchen operations through strong example and clear communication of expectations.
• Assisting the Chef de Cuisine in execution of all dishes
• Creating kitchen staff schedule and maintaining payroll budget, including overtime requests.
• Ensuring smooth kitchen function across all services.
• Maintaining a clean and organized back of house kitchen operation.
• Organizing three daily family meal services for hotel staff.
• Ensure all cooks follow appropriate food safety practices.
• Ensure all cooks are in proper uniforms and are appropriately prepared for their shift.
• Ensure all stations are cleaned and broken down properly.
• Maintain a clear working knowledge of all menu items at all times, as well as the sources for all of the ingredients in all of the menu items.
• Work with Chef to implement all menus (Breakfast, Lunch, Brunch, Dinner, Late Night, Room Service and Team Member Meals).
• Maintain an archive of past menu items with Food & Beverage Director.
• Perform daily check of all areas of kitchen to ensure properly functioning equipment as well as a safe, clean and well organized working environment.
• Maintain a clean and well organized working environment for all kitchen staff.
• Ensure that all kitchen equipment (all refrigeration, ovens, stove, salamander, grill, ice machine, mixer, dishwashers, slicer and blenders) is regularly maintained and safely functioning.
