Sparrow features an expansive menu by Chef AJ McCloud and Chef Jan Claudio consisting of comforting Italian and Mediterranean classics with creative twists, offering a selection of pasta, pizzas, and other wood-fired creations that exude bold flavors and high-quality, sustainable, and organic ingredients. Its cuisines are complemented by adventurous mixology that uses fresh, seasonal ingredients, and the finest spirits to craft dynamic cocktails all rooted in the flavors of Italy. Offering a resort-like respite, Sparrow’s signature design transports guests to the enchanting southern European coast. Mission

To manage and oversee employees at Sparrow & Casita at Hotel Figueroa, as a collective member of the management team. As well as having a focus on large party events, all VIPs and the conversion of Tocamigo’s to the Noble 33 Program. Lead and oversee VIP services at Sparrow & Casita as well as oversee the Host Team as a whole. To assist in managing day to day operations for Sparrow & Casita, including marketing initiatives, staff scheduling, training and execution, driving top line revenue as continual focus.  

 

Outcome 

  • Actively engage with SevenRooms guest notes, profiles, and management of reservation books - Ownership of all VIP guest notes on a continuous basis 

●  Drive innovative ideas for delivering an exceptional dining experience

  • Oversee Toca Scottsdales Noble 33 database, maintain and build members based on goals set by Corporate

  • Convert existing Tocamigos (that qualify) and clean up database 

  • Assist in training guides for all Host/Door Positions

  • Boost standards of excellence for all Host/Door staff 

  • Drive ideas for social media posts and photos to coordinate with current marketing initiatives

  • Host Scheduling/ Training 




Day to Day Venue Management 

●  Follow manager delegations as assigned by the General Manager, including but not limited to all opening, mid and closing duties

  • Complete all checklists, ensure health department compliance

  • Ensure Host Team is completing all tasks and successful

  • Actively trying to build VIP Program

  • Overview SevenRooms and make notes on important reservations

  • Actively Table Touch making presence and ensuring positive experience

  • Actively working with staff to create best venue experience possible

●  Execute all venue management tasks as outlined by General Manager when     scheduled



Ensure brand standards are maintained 

●  Ensure all service standards are maintained with hospitality focus

●  Ensure all guests are attended to and treated with utmost respect by Host/Door team

  • Maintain venue cleanliness and upkeep in common areas

  • Assist in developing training and classes for Host and VIP services training

  • Ensure we promote the brand in its best interest 



Manage Events & VIP Services at the Store Level

  • Assist in overseeing and executing large party inquiries 

    • Report weekly in manager meeting all upcoming events, BEO’s and special parties that the operations’ team needs to be looped into - In Maitre D’s absence. 

    • In a timely manner, directly communicate with the culinary team to ensure BOH is prepped and ready for all parties and event needs - In Maitre D’s absence. 

  • Concierge runs as directed by the Corporate Team

    • Hotels, Upscale Businesses, Resorts, etc.

    • Meet and make introductions with venues to create relationships and bring on more business

  • Constantly oversee promo tables, hosted tables, VIP tables, Influencer program, TocaMigo’s/ Noble 33 program. Ensure all are coordinated and handled seamlessly, with a focus of driving top line revenue from these programs while keeping costs manageable.

    • Lead Hosted Comp tables with oversight of overall venue comps

    • Ensure Hosted Menus are being used and being entered and comped correctly 

    • Works closely with Sparrow/Casita Culinary team on any specialized hosted menus

 


Manage Inventory and Goals

  • Ensure proper menu pars and extra menus are in place, keep active/running total/par

  • Manage any special menu and additional or seasonal menu printing requests and needs through marketing department

    • Keep hosted menus up to date and edited 

  • Upkeep all Host stand hardware and devices. 

  • VIP Report/ Cover Report done weekly

  • Track goals and progress made by Noble 33 program as well as overall VIP Services for Sparrow & Casita

  • Creatively come up with ways to drive these goals and initiatives 


Manage Sparrow/Casita Venue

  • Execute responsibilities as previously outlined

  • Understand that manager tasks and delegation will evolve and be provided by General Manager to employees. These tasks must be followed and executed in a timely fashion 

  • Work assigned manager shifts per week, including but not limited to opening or closing as well as administration or office work. Other duties may evolve.

  • Comply with all S.O.Ps and service requests

  • Communicate with empathy to floor staff

  • Train on all additional methods for managing Sparrow/Casita
