Description
The Inn at Pound Ridge by Jean-Georges in Westchester is seeking Pastry Cooks. Responsibilities (these are not all inclusive):
• Prepares all ingredients for baking; measures and mixes ingredients according to recipe using cups, spoons and scale.
• Prepares and cooks all kinds of cakes, pies, puddings, custards and desserts according to recipes of all kitchen sub-sections.
• Mixes, kneads and shapes dough to make pies, cakes, cookies and other pastries.
• Prepares all a la carte and special desserts during service hours.
• Regulates thermostat controls of ovens and times all foodstuffs being baked.
• Follows the instructions and recommendations from the immediate Superiors to complete the daily tasks.
• Ensures the highest standards and consistent quality in the daily preparation and keep up to date with the new products, recipes and preparation techniques.
• Coordinates and participates with other sections of requirements, cleanliness, wastage and cost control.
• Ensures that the restaurants cost control policies and procedures are followed.
• Reports for duty punctually.
• Maintains a high standard of personal appearance and hygiene.
• Undertakes any reasonable task and secondary duties as assigned by Superiors.
• Other duties and responsibilities common to all Pastry Cooks, which might be assigned from time to time by the Executive Pastry Chef.

• Willingness to work a flexible schedule and holidays

Qualifications:
• A minimum of 2 yrs. experience within a pastry department.
• Total understanding of proper pastry methods, techniques and standards.
• Ability to withstand extreme temperatures within the kitchen, refrigerator and freezer environments.
• Culinary degree preferred but not required.
