Job Description and Summary:

We’re proud to be the very first London restaurant to make ramen our game, opening a small hole-in-the-wall ramen bar in Soho - back in 2012. Fast forward to today, and we now have 10 restaurants in our group – with big plans to grow even further!

Every morning, our chefs put pot to stove and start making our signature stocks from scratch. While the stock simmers, our fresh noodles are made over at our Haggerston restaurant – using mid-century noodle making machines, imported from Japan.

We want to ensure our customers have the best possible experience. One that leaves them wanting more! And that’s where you come in…

As a Tonkotsu Head Chef you are the person who manages the day-to-day operation of the kitchen. You will lead a Back of House team and are tasked with optimising the quality of the food, service and developing the team and maintaining high quality safety standards of the restaurant. The main purpose of this role is to manage all aspects of the restaurant, ensuring that all customers have the best possible experience, that team morale is high and that the Tonkotsu standards and values alongside commercial success are achieved.

Key Responsibilities

• Lead a motivated team to ensure a smooth-running and profitable kitchen
• Hire, train and supervise full time and part time employees
• Drive profitability within the restaurant
• Ensure all financial procedures are adhered to, which include (but not limited to);
o Labour – organising staff schedules to be in line with agreed budget
o Stock control – accurate counting and entering of figures
• Ensure the Health and Safety regulations are strictly observed, recorded and archived
• Monitor quality and availability of products and service provided
• Hit agreed Key Performance Indicators (KPI’s), which include;
o Mystery Shopper results
o Health, Safety and Hygiene results (Surefoot/EHO)
o Operational Checks
o Periodical P&L’s results (?)
• Ensure all security procedures are adhered to
• Complete all necessary documentation to company standard (e.g. Trail)
• Live and breathe the Tonkotsu Values

• is very organised, controlling their own workload and that of the team
• has hawk-like attention to detail, ensuring every dish is prepared to specification
• can prioritise and delegate in a busy and high-pressure environment
• is perceptive – sensitive to the needs of customers and colleagues and deal with both with compassion
• is approachable and warm, with a friendly demeanour
• can build a strong team and be a master of motivation, working in harmony with the team to create a perfect restaurant environment and team work
• will mentor the team, advising and assisting them to grow and develop
• will take responsibility for their actions
