Rate of pay: £8.21 plus 3 tronc points ( tronc points equal to around £1 per point - potential earnings £10.71 p/h after probation £11.21)

Job Description and Summary:

We’re proud to be the very first London restaurant to make ramen our game, opening a small hole-in-the-wall ramen bar in Soho - back in 2012. Fast forward to today, and we now have 10 restaurants in our group – with big plans to grow even further!

Every morning, our chefs put pot to stove and start making our signature stocks from scratch. While the stock simmers, our fresh noodles are made over at our Haggerston restaurant – using mid-century noodle making machines, imported from Japan.

As a Tonkotsu Chef you are the person who manages the day-to-day operation of the kitchen in the absence of the Sous Chef. You will help lead a Back of House team and are tasked with optimising the quality of the food, service and developing the team and maintaining high quality safety standards of the restaurant. The main purpose of this role is to manage all aspects of the restaurant, ensuring that all customers have the best possible experience, that team morale is high and that the Tonkotsu standards and values alongside commercial success are achieved.

Key Responsibilities

• Lead a motivated team to ensure a smooth-running and profitable kitchen
• Help to hire, train and supervise full time and part-time employees
• Drive profitability within the restaurant
• Ensure all financial procedures are adhered to, which include (but not limited to);
o Labour – assist in organising staff schedules to be in line with agreed budget
o Stock control – accurate counting and entering of figures
• Ensure the Health and Safety regulations are strictly observed, recorded and archived
• Monitor quality and availability of products and service provided
• Hit agreed Key Performance Indicators (KPI’s), which include;
o Mystery Shopper results
o Health, Safety and Hygiene results (Surefoot/EHO)
o Operational Checks
• Ensure all security procedures are adhered to
• Complete all necessary documentation to company standard (e.g. Trail)
• Live and breathe the four Values
