Founded by Chef Bruno Macchiavello and Randy Garcia in 2013, VIVA Chicken is a fast-casual charcoal-fire rotisserie joint specializing in the authentic Pollo a la Brasa (rotisserie chicken) found on the streets of Peru. At Viva, you will find a “scratch” kitchen where our food is made fresh daily. VIVA promises distinctive and flavorful menu items packed with inspired recipes in a vibrant, inviting atmosphere. Based in Charlotte, North Carolina, VIVA Chicken has 17 restaurants across the Carolinas, Georgia and Utah. Total compensation ranges from $50,000 to $60,000 per year!

  • Competitive Compensation with opportunity to grow with the concept. Hourly Managers start between $20-$23 per hour with the opportunity to earn bonus once finished with training. Total compensation ranges from $50,000 to $60,000 per year

    • Quality of life work schedule. – 5-day work week and 40-45/hours a week. Our restaurants close at 9:00 pm every night. 
    • Closed Thanksgiving and Christmas. Close early Christmas Eve. Hourly Managers are paid for Thanksgiving and Christmas Day
    • 2-weeks of paid vacation each calendar year – 1 week after the first 6 months, 2nd week after 1-year employment. Managers in their role for 5-years receive a 3rd week of vacation!
    •  40 hours of Sick Pay (after 1-year employment). 
    • Free shift meals – and the ability to purchase discounted food. 
    • Opportunity to participate in Insurance with a choice of two medical plans that provide comprehensive medical and prescription drug coverage with options to add dental and vision. When enrolled, Viva provides a FREE $25,000 life insurance policy.

Requirements / Qualifications:

  • 2-3 years of culinary management experience in a high volume, fast-paced environment is helpful.
  • Responsible for operations and ensuring we are exceeding guest expectations with a passion for food safety, people, and service.
  • Mind set of maintaining a diverse, equitable, inclusive work environment filled with respect for all. We want everyone to feel like “I belong at Viva Chicken”!
  • Ability to handle multiple responsibilities at once including restaurant operations and catering events working with and through the back of the house team.
  • Responsible for recruiting, training, cross-training and retaining the kitchen staff as well as scheduling, giving feedback, and being collaborative explaining the WHY’ with staff.
  • Strong communication and organizational skills. Ability to mentor, coach, teach and give feedback.
  • Commitment to food quality, recipe adherence, and consistency. Has a strong grasp of health and sanitation requirements and runs a Neat, Clean and Organized kitchen.
  • Strong understanding of cost controls within food cost and labor deployment of hours. Ability to follow established Best Practices.
  • Ability to teach and coach Shift Leaders to take on more responsibility and manage more effectively.
  • We are looking for candidates who have a proven track record of “People Development” and are excited about training and developing the team.
  • Must be able to reach, bend, balance and carry large objects within the kitchen repeatedly throughout your shift.

Multiple locations are open in and around Charlotte. NC, Greenville and Charleston, SC and two in Atlanta with many opportunities for advancement and growth.
