Five square meters on London’s famous Bermondsey Street was all it took to conceive WatchHouse and lay the foundations of everything that was to come. Historically a shelter for men guarding the graveyard of St Mary Magdalen’s Church, today we honour its former role by providing a contemporary sanctuary to our customers. This tiny building became our namesake and the home of a simple ambition, to offer quality coffee, food and service, and bring a new lease of life to this unique building. 


From these humble beginnings our ambitions have continued to grow, leading us to new spaces, cultivating great relationships and expanding what we want to bring to our customers. This journey formalises itself in what we consider to be Modern Coffee. As we look to the future, we hope to continue to build on what we started with; preserving the legacy of our spaces remains at the heart of our development, and Modern Coffee at the heart of what we do.


With six cafes across London the company continues to grow at pace with exciting opportunities for those wishing to build a career in hospitality. WatchHouse offers food and beverages positioned in the premium end of the market and pride themselves on elevating customer expectations of a what a modern cafe environment should be.  


Our Roastery which opened August 2020 is a real hub of energy, whilst being the important roasting operation at the core of the WatchHouse business, it also is home to the Support Office, brand spankin’ new training facilities and the beautifully crafted Maltby Street Watch House café, open to customers 7 days a week. A considered space which seamlessly encompasses the beating heart of the Watch House business with the Modern Coffee customer experience.


The Roastery Assistant position is a demanding but exciting role. It is an entry level, hourly paid role working 5 days a week in the Roastery. The shifts will be Sunday to Thursday every week, in line with the current schedule at the Roastery to allow for thorough training.

Specific Aspects and Requirements of the role:
- I scrupulously measure, weigh and pack huge amounts of coffee. And, at times, hefting boxes of coffee around. I re-bag coffee from 3kg bags into 250g bags and more! I am comfortable being able to lift bags and boxes, and comfortable knowing what my limits are too. Operate the pallet truck for receiving green coffee and learn how to properly handle these weights.

- I support with picking and fulfilment of retail and wholesale orders. I pack all coffees according to the daily production spreadsheet and use paper and computer systems to record and process my work.
Label & Pack retail bags to our high WatchHouse standards and label and fill tins for shop use.

- We want to be as efficient and as effective with our processes as possible, from roasting right through to delivery. That means, dealing with and recording everything from batch numbers and addresses to grind sizes. I’ll be pulling down and collating orders through to labelling bags. Reading and understanding the internal spreadsheets for stock and packing required for shops is key.

- I clean and maintain equipment and the Roastery site, following Health & Safety and Fire Safety procedures to the letter. Perform maintenance on our lab equipment such as grinders, machines and sample roaster as well as assisting in other deep cleaning tasks such as the Probat UG22, green warehousing and roasted warehousing areas.

- I work in an environment where a product is being created, so I’ll be the last point of contact with the product ensuring quality right through to dispatch and delivery. I’ll also receive and unload deliveries. Fulfil Wednesday dispatch, following our colour coding systems and attaching all required paperwork.

- I work seamlessly with the production team, both in operations and dispatch. Roast day preparations, how to properly dose green coffee and our marking system for batches.

- I build relationships that foster knowledge sharing and strong understanding of the wider business. I muck in to get the job done.

Maintenance and safety:
- I am responsible for cleaning and maintenance of the roaster and other equipment.

- I am accountable for HACCP in the Roastery and using trail to keep an up to date record of cleaning and Health and Safety and Fire Safety checks. Learn basic fire safety so they can feel confident and support the roaster on our roast day.

Roastery operations:
- I prepare the green beans for production- scheduling in Cropster (so the roasting system knows what batches need roasting) weigh the coffee and put the green coffee in tubs in the order they need to be in. Clean and prep. the empty tubs, with batch names ready for use on roast day. Gather all the order put them into Cropster

- I actively manage the Cropster system- inventory, quality checks and roasting. Maintaining and ongoing the input of data to ensure the system continues work in a way that supports the roastery operation. Tracking green coffee inventory through Cropster. Inputting roasting data for future profiling- managing and editing current profiles.

- I manage the packing operation including the packing person and support with picking/packaging/dispatch.

- I am responsible for ordering the stock that is available on the ecommerce site. After the orders have been accepted by Shopfiy and Royal Mail managing the packing (including envelope with coffee card, Watch House booklet, personal written note, manually embossing envelopes) and pre-paring orders for dispatch. This includes grinding coffee (up to 7 different options) for customer orders.

- I prepare coffees for dispatch to shops including receiving orders from the shops, creating the delivery lists, ensuring coffees are ready to dispatch and using the colour code method when packing into crates. Completing the documents for the shops (market man order note, maintenance note, and feedback forms from the shops).

General Aspects of the Role:
- Learn how to prepare cupping tables.
- Be an integral part of a high performing roastery team.
- Ensuring the roasting side of the business is compliant with Health and Safety and Fire Safety laws.
- To have excellent organisational skills, keeping work schedules, cleaning schedules and shipment records.
- Assist with the operational aspects of our coffee deliveries at the relevant sites.

Experience Preferred:
- Hold an utter passion for specialty coffee and the wider coffee industry.
- You must have an excellent palate and understand the London coffee scene.
- Follow Health and Safety and Fire Safety procedures meticulously.
- Strong planning and organisational skills with a sense of priority for deadlines and attention to detail.
- Experience with Microsoft Software, Excel and Outlook.
