Woolley Grange Hotel, part of Luxury Family Hotels are looking for an experienced and dynamic Head Chef/ Group Lead Head Chef.

This is an exciting opportunity for a talented and motivated individual to make a significant impact by developing our position on the local culinary map and to take ownership by using initiatives to further promote the Luxury Family brand. You will take our hotel through an exciting development programme, with the addition of new bedrooms, creating a new kitchen and restaurant with associated concept and menus. 

 About Luxury Family Hotels:

Luxury Family Hotels have five distinctive and delightful hideaways to choose from, from a Jacobean manor house to a New Forest hunting lodge, offering family escapes in some of England’s finest locations. We are currently investing in all our hotels including refurbishments to all bedrooms and public areas.

 About Woolley Grange Hotel:

We are beautiful Jacobean manor house with 25 bedrooms on the outskirts of Bradford-on-Avon, Wiltshire.  We have two dining spaces, OFSTED registered kids club, Spa, indoor and outdoor swimming pools, 2 treatment rooms, kitchen garden and acres of space for families to play,

Main Objectives of the role:

Leading by example you will build and maintain a professional, efficient, safe and enjoyable kitchen environment. Inspired by the Woolley kitchen garden to showcase our homegrown produce, you will ensure the seasonality of all the menus at Woolley, working collaboratively with our Head Gardener.

You will be results orientated, achieving financial targets and to ensure the highest level of customer satisfaction.  You must be light on your feet, creating and responding to opportunities to surprise and delight guests (resident and non-resident) in a changing commercial environment. 

As Group Lead Chef you will collaborate with Group F&B Manager and coordinate Head Chefs in LFH with group initiatives.  You will ensure that the group menu offering continually evolves, always delighting our guests of all ages.  You will have an active role in Head Chefs meetings and represent LFH in promotions and media initiatives.  You must remain at the forefront of the industry, being aware of best practice and trends which might be appropriate for or could be adapted to suit LFH.

 Key Responsibilities:

  • Develop, design and train employees on varied exciting and innovative seasonal menus that meets the needs of the operation, whilst achieving the food GP and targeted guest satisfaction scores.
  • Inspire, train, and develop employees in their careers and document training. This should include visiting suppliers, specialist training etc where appropriate.
  • Able to demonstrate an exceptional level of communication and maintain excellent relationships with other Heads of Department.  You should have a proactive, flexible and approachable attitude, to ensure smooth operations between departments and contribute towards a positive working environment and culture.
  • Develop fun and interesting activities for families, supporting your team to deliver the activities.
  • Use every annual/themed event to show case garden produce in dishes such as Christmas, Valentines, Easter, annual open day, annual apple day, charity events etc.
  • Be involved in marketing events such as engaging with visiting journalists, representing Woolley at local events such as Bradford-on-Avon Food Festival
  • Develop seasonal produce to sell through the Woolley shop.
  • To treat all colleagues with respect and help should they require assistance.
  • Promote and ensure that a safe working environment is always maintained in line with Health and Safety guidelines, maintaining 5 stars for food hygiene.
  • Ensure up to date allergen information for all menus and be instrumental in staff training and awareness.  Engage with guests where necessary to ensure allergen safety during visit.
  • Ensuring all kitchen activities meet and comply with up-to-date COVID-19 rules and regulations.
  • Set and monitor all areas of the HACCP system ensuring designated paperwork is completed as required under UK legislation and instructing employees is the standards.
  • Conduct weekly stock checks and be capable of compiling and reporting on stock and financial results in a timely manner as required.
  • Look for any inconveniences to our guests and immediately act upon them.
  • Show personal initiative to help generate “wow” moments during guest stay, always looking to go the extra mile.
  • Be a key face and character as a senior manager in the hotel leading by example, animating your department, the wider hotel and guest experiences.
