Description
Check mise-en-place from day before.
Check low boys and make sure that they are reading at 40 or below.
Properly rotate fish with FIFO.
Properly store and label mise-en-place at the end of the night.
Write down prep sheet after service every night.
Create schedule for the sushi station, monitor schedule and overtime.
Maintain sushi log-rice log.
Give order needs to sous chef.
Oversee raw bar and oyster tags are in place.
Communicate ordering needs with Sous chef for fish order.
Maintain professionalism and cleanliness of all 2nd floor staff throughout service.
Create new specials!
Planning and apportioning tasks and duties among their workgroup.
Upholds all human resources best practices as it pertains to coaching, counseling, disciplinary, hiring,
and terminations.
