Description
The Pastry Cook will continue gaining knowledge of making pastries from recipes by Eric Kayser while working in a state of the art production site. The Pastry Cook will be exposed to learning to produce many kinds of pastries and desserts offered by Maison Kayser. This position will have the opportunity to ensure consistent quality of our products and follow guidelines to garnish and finish our products before displayed for customers.
Essential Functions
Check production list and manage production without supervision to meet daily needs
Identify and select ingredients, prepare, form, and bake French pastries
Garnish pastries as instructed, including but not limited to prepare and apply glazing, icings, confit, pastry cream, and mousse
Provide guidance to at least one Pastry Helper and to provide feedback for Supervisor's evaluation
Organize and manage stocks in a freezer up to -4 Fahrenheit (Gear is provided)
Ensure that all products are consistently arranged, stored, labeled, dated, and rotate items stored in all pastry sections
Ensure that all perishable items are stored quickly and efficiently, thus avoiding unnecessary quantities being held within the pastry production areas, always ensuring complete utilization of all items with minimal wastage
Comply with and fully understand the laws and regulations regarding food safety, health and safety using different equipment
Perform all necessary cleaning duties and contribute to the overall cleanliness of the pastry production at all times and within all sections
Communicate effectively to pastry team regarding inventory, product pars, and production levels
Adhere to the strict policies regarding personal grooming and hygiene
Ensure all accidents are reported to a senior team member, such as equipment damage or injuries
Attend all briefings and meetings as required
Requirements
2 years of experience in a high-volume pastry production or similar environment or a professional degree (4 years) in pastry
At least 6 months of experience with French pastry preferred
Knowledge and experience in all aspects of the pastry production
Be able to work in a standing position for long periods of time (up to 8 hours)
Availability to work shifts of 5am or 12pm
Must understand knowledge of high quality products and be passionate about pastries
Must be able to lift and carry up to 40lbs and must be able to push or pull up to 150lbs during the shift
Ability to maintain regular, punctual attendance consistent with the ADA, FMLA, and other federal, state, and local standards
