Description
OVERALL OBJECTIVES:

1. To ensure all operational structures are in place.
2. To be knowledgeable on all aspects of the menu and wine list.
3. To be representative and take ownership of the Bakery / Restaurant/bar department at Maison Kayser.
4. To take ownership of the service, management standards and housekeeping rules.
5. To have a professional approach to service in order to maintain exemplary standards.
6. To provide support and guidance to the team.
7. To ensure customer satisfaction and rapport by assuming the role of host within the Bakery / Restaurant, to be courteous, welcoming and to know the name/details of all regulars.
8. To run the Bakery / Restaurant inside the budget guidelines.

3. “Hands on” and “Proactive” attitude to work, hard working with long hours.

KEY TASKS:

1. To maintain a visible presence on the Bakery / Restaurant floor during service hours.
2. To assume the role of host within the Bakery / Restaurant, meeting, greeting and maintaining guest contact throughout.
3. To be attentive and professional at all times. To recognize all regulars and be aware of their likes and dislikes. To use their names at all times.
4. To ensure that guest history is constantly updated and all documentation requested by Sales & Marketing is delivered on time.
5. Meet on regular basis with the PR Company and provide all necessary info and documentations.
6. Control reservation procedures and to maximize all bookings / reservations.
7. To perform duties in the Bakery / Restaurant in compliance with statutory health & safety, hygiene requirements and Maison Kayser’s licensing laws.
8. To ensure that the highest standards of cleanliness are achieved and that furnishings and equipment are maintained, providing a safe, clean and pleasant environment.
9. To oversee proof reading and maintenance of the menus, to ensure spelling and formatting is correct, to ensure that pricing on the menu matches the POS system.
10. To ensure that the flower arrangements are fresh and in a good condition at all times and done according to the standards agreed.
11. To ensure that sufficient maintenance is carried out.
12. To assist sommelier in training and tasting.
13. To have a full and complete knowledge of the food served at Maison Kayser in order to take ownership of the highest possible display of knowledge in the Bakery / Restaurant.
14. To be knowledgeable on all available specials and any proposed alternatives to our guests.
15. To be in total control of service, knowing the allocation of staff on duty, always using correct table number and position numbers.
16. Ensure the staffing schedule meets the daily business needs and amend accordingly.
17. To make sure the payroll is processed on time and that all hours worked are accounted for.
18. To control payroll and labor costs according to budget.
19. Attend all briefings prior to service with all Bakery / Restaurant team.
20. To be able to handle all guest complaints and follow through until full guest satisfaction.
21. Responsible for the operations, workings and appearance of the Bakery / Restaurant, to retain the high standards set and to be maintained at all times.
22. Maintaining high standard of direction for Food and Beverage, operations.
23. First point of contact for operational maintenance and repair issues
24. Correspondence with operational maintenance
25. Instigate employee development in order to promote a climate of enthusiasm and encouragement.
26. To chair and participate in weekly head of department employee meetings to discuss and solve challenges as well as to establish

• Ability to safely and successfully perform the essential job functions consistent with the ADA, FMLA and other federal, state and local standards, including meeting qualitative and/or quantitative productivity standards.
• Ability to maintain regular, punctual attendance consistent with the ADA, FMLA and other federal, state and local standards
• Must be able to lift and carry up to 25 lbs
• Must be able to talk, listen and speak clearly on telephone
• Be able to work in a standing position for long periods of time (up to 6 hours).
