SOUS CHEF/KITCHEN MANAGER

Are you looking for a great new opportunity? Well UK based Ole & Steen is coming to the US and we are looking for great kitchen crews!

We are looking for SOLID Sous Chefs/Kitchen Managers for our restaurants and commissary.

We are setting up interviews starting this week!!

You are hands-on and lead by example with everything that you do. Operationally, your day includes management of all food deliveries and delivery of all food offerings throughout the day, ensuring specs, quality, standards and safety are delivered consistently to the high quality Ole and Steen sets ourselves

You will practice 5 star food health and safety policies and ensure kitchen run in a safe manner.
You will act as a role model for staff and ambassador for Ole & Steen, reflecting its unique culture, positive attitude and excellent standards at all times.

You will play a key part in planning purchasing and controlling wastage and weekly inventories to ensure budgets food costs are achieved.

THE ROLE:
CULINARY
• Manage Daily Production
• Training of Production Team
• Quality Control and QA tracking
• Maintaining RTE Inventory
• Maintaining Row products for production

DRIVERS
• Liaise with stores about missing products or late deliveries (please ensure you have all site numbers)
• Responsible for driver’s full product knowledge of all culinary goods

HEALTH & SAFETY
• Health & Food Safety (Please use Health & Safety Manual)
• Daily / Weekly Food + Health & Safety checks as shown
• Daily Fridge Temperatures monitored and recorded as per Health & Safety Manual
• Logs HACCP records, maintaining production records and traceability for all products produced.
• Update Daily / Weekly Cleaning Checklist and ensure this is being done. EHO like to see written evidence of this being done
• Hold DOHMH Permit

FINANCIAL
• All Kitchen Staff hours recorded correctly on fourth and pay correct for pay period
• Holidays / days off properly recorded
• Ensure pay rates for Kitchen Staff are set at company rate
• Leads CPU Weekly Inventory


WASTE MANAGEMENT
• Waste management that is appropriate to company requirements
• City Harvest food bank program
• Food Waste. Continuously review what we waste and share data, also, propose waste saving measures noticed during production
MAINTENANCE
• Manage scheduled kitchen cleaning duties and cleaning checklists

ADMIN
• Daily Ordering
• Tracking of Waste
• Weekly inventory of all goods to be counted
• Manage recipe updates and rollout of new items
• Trained on hiring, onboarding, basic HR procedures
• Budgeting and managing of staff schedule

YOU:
• You are a dynamic leader with excellent time management skills, who is service inspired and volume savvy.
• Fluid in facility volume management is an area that you have substantial experience in. You are totally committed to achieving the standards required within Ole & Steen. You insist upon and inspire a “no compromise” attitude to poor performance and are confident in upholding and implementing consistently high standards.
• You are a natural leader – self-motivated and possessing enthusiasm and a genuine passion for food.
• You have excellent knowledge of kitchen operations including health and safety regulations, (you hold an intermediate / advanced food hygiene certificate), food safety auditing systems and employment law.
• You have a positive attitude and are able to proactively manage staff.
• You have experience of working with food stock management systems and are IT literate
• You disciplined to ensure that all checklists and systems followed to completion.
