SOUS CHEF/KITCHEN MANAGER

Are you looking for a great new opportunity? Well UK based Ole & Steen is coming to the US and we are looking for great kitchen crews!

We are looking for SOLID Sous Chefs/Kitchen Managers for our restaurants and commissary.

We are setting up interviews starting this week!!

You are hands-on and lead by example with everything that you do. Operationally, your day includes management of all food deliveries and delivery of all food offerings throughout the day, ensuring specs, quality, standards and safety are delivered consistently to the high quality Ole and Steen sets ourselves
You will practice 5 star food health and safety policies and ensure kitchen run in a safe manner.
You will play a key part in supporting your Culinary Director, planning purchasing and controlling wastage and weekly stock takes to ensure budgets food costs are achieved.

THE ROLE
• To translate the concept and ideals of Ole & Steen into a successfully operating restaurant & kitchen.
• To assume overall responsibility for the smooth running of the kitchen.
• To achieve the highest food standards in order to exceed both customer and staff expectations.
• To act as role model for staff and ambassador for Ole & Steen, reflecting its unique culture, positive attitude and excellent standards at all times.
• To ensure all Heath and Safety guidelines set out by are followed to the letter
• Make sure that all food is built to spec and all weight and measures followed
• Daily walk rounds of the business as well as weekly audit with the GM should be done.
• In charge of following and implementing the correct par levels for production, have an eye for detail making sure the food is delivered to our company specs.

YOU
• You are a dynamic kitchen leader who is service inspired and volume savvy. You have experience of running a kitchen within a busy, high turnover environment and understand the importance of meeting targets, delivering food to company specs.
• Kitchen volume management is an area that you have substantial experience in. You are able to hit the balance between the demands of the business and exceeding expectations on quality.
• You are totally committed to achieving the standards required within Ole & Steen. You insist upon and inspire a “no compromise” attitude to poor performance and are confident in upholding and implementing consistently high standards.
• You are a natural leader – self-motivated and possessing enthusiasm and a genuine passion for food.
• You have excellent knowledge of kitchen operations including health and safety regulations, (you hold an intermediate / advanced food hygiene certificate), food safety auditing systems and employment law.
• You have a positive attitude and are able to proactively manage staff, adapting your approach to suit both busy and quiet times.
• You have experience of working with food stock management systems and are IT literate
• To demonstrate the Ole & Steen ideal by ensuring the kitchen set up, running and closedown consistently meets the required high standards
• To ensure all kitchen paperwork is completed daily and all cleaning schedules are followed to completion.
• To ensure quality is monitored and consistently delivered through observation, attention to detail and interaction with staff.
• To ensure the daily/ weekly hygiene check is completed
• Ensure all cleaning is carried out to standard and cleaning schedules are filled in and signed on a daily basis
• Ensure all aspects of the kitchen food and health and safety procedures are followed
• Ensure all food items are correctly labeled and correctly stored and that the date dot system is followed and implemented
