REPORTS TO:
The Supervisor reports to the General Manager; and during shift to the most senior
Manager on duty
The Chef reports to the General Manager; and during shift the most senior Manager on duty
and the Head Chef or Sous Chef.
ROLE:
The Chef role is to work alongside the Head Chef/Sous Chef to maintain and develop the
principles and values of the company in all areas including, but not limited to the following:
• Financial
• Quality Control
• Health & Safety
RESPONSIBILITIES:
The role of the Chef is to be accountable for all that is detailed below & to ensure that they
are supporting, assisting and communicating with their superiors. (General Manager, Head
Chef & Sous Chef)
Financial
• Ensure all food storage and product rotation maximises potential profit of product
• Receiving, storing and controlling all of the food inventory
• Product preparation is completed to standard to ensure recipe potential is achieved
(salads, peeled vegetables)
• Ensure all chemicals are stored correctly and correct amounts are used in the day to
day kitchen schedule
• Ensures all working utensils, work surfaces, walls, floors and equipment are cleaned
and maintained to maximise life span to operate to full capacity
Quality Control
• Full commitment to product knowledge
• Receiving of daily produce deliveries and checking of quality (including weights and
temperature)
• Organising kitchen inventory and ingredients
• Ticket Time management
• Ensuring a first in, first out food rotation system (FIFO)
• Verify all food products are properly dated and organised for quality assurance
• Keeping cooking sections stocked, before and during prime operation hours
• Receiving of goods
• Dish presentation management
• Ensure that food storage units all meet standards and are consistently well-managed
• Product consistency
Health & Safety
Health & Safety and Food Hygiene is the responsibility of all however you must have an
awareness of and follow the following:
• Awareness and adherence of the Company’s Food Safety Policy
• Awareness and adherence to the Company’s Health & Safety Policy
• Ensure the day-to-day operating procedures in the restaurant are to the required
standards and comply with the HACCP and Health and Safety policies and
procedures
• Assist General Manager & Head Chef in tackling any food safety, health and safety
issues/failings and report to the General Manager anything you believe may
compromise the health and safety of yourself, your colleagues or our guests
• Ensure that any incidents/accidents that occur within your restaurant are reported
to the Restaurant Manager or Manager on Duty
Human Resources
• Health & Safety adherence including risk assessment and equipment maintenance
(internal)
• Always have a smile on your face to encourage a friendly and welcoming
environment
• Work well with all team members within the restaurant and all Prezzo employees to
help create a positive atmosphere
Other Duties
• Maintaining skills and product knowledge as trained
• Attending, participating in and contributing to briefings and team
