Description
Santa Monica Proper is seeking a skilled and creative Pastry Chef. A seamless merger of historic retrofit and new construction, the 271-room Santa Monica Proper hotel features interior design by international style icon Kelly Wearstler, multiple dining options by local area culinary stars, a rooftop lounge and swimming pool, 8,000 square feet of meeting and event space, and almost 7,000 square feet of ground floor retail.

The Pastry Chef must have proven experience creating delicious pastries, desserts and baked goods and will create new dessert items that complement and enhance our menu. The Pasty Chef will report directly to the Executive Chef and assist throughout the hotel in outlets including the Rooftop Lounge (Calabra), Lobby Lounge (Palma), Banquets and In-Room Dining.

Responsibilities
• Direct the creation and preparation of all pastry dishes and baked goods
• Create scalable recipes for all-new dishes
• Adhere to set recipes and taste test for quality assurance
• Ensure all pastries are uniform and up to standard
• Source and select necessary pastry ingredients
• Demonstrate proficiency in the creation of signature desserts and pastries
• Collaborate with the executive chef to create exciting new desserts that complement our menu
• Mange foods costs and inventory for pastry goods
• Stay current and informed of useful culinary trends
• Organize tastings to test out new dessert and bakery items
• Adhere to all sanitation, safety, and food preparation laws

Qualifications
• 2+ years of kitchen experience preferred
• Proficiency using kitchen equipment and appliances
• Enjoys working in a collaborative kitchen
• Thrives in a fast-paced environment
• Excels in task delegation and kitchen station management
• Clear and effective communicator
• Extremely organized with high attention to detail
• ServSafe Required

Education
• High School diploma required
• Pastry Arts or other culinary certification preferred
