Description

Santa Monica Proper is looking for an experienced Cook 2. A seamless merger of historic retrofit and new construction, the 271-room Santa Monica Proper Hotel features interior design by international style icon Kelly Wearstler, multiple dining options by local area culinary stars, a rooftop lounge and swimming pool and 16,000 square feet of meeting and event space.

The Cook 2 sets up and provides quality service in all areas of food production for menu items and specials in the designated outlets in accordance with standards and plating guide specifications.  The cook maintains organization, cleanliness and sanitation of work areas and equipment.

Job Overview
Maintain complete knowledge of correct maintenance and use of equipment.  Use equipment only as intended. 

Monitor and maintain cleanliness, sanitation and organization of all hotel areas. 

Maintain complete knowledge of table/seat/position numbers, sections, room capacity, hours of operation, proper table set-up and dress code of the restaurant. 

Maintain and strictly abide by State sanitation/Health regulations and Hotel requirements. 

Meet with Head Cook/Sous Chef to review assignments, anticipated business levels, changes and other information pertinent to the job performance. 

Organize all of the various prep items needed from different areas to ensure that all items are in place and ready for service. 

Ensure that each Kitchen work area is stocked with specified tools, supplies and equipment to meet the business demand. 

Inspect the cleanliness of the line, floor, all Kitchen stations.   


Requirements
3+ years’ experience as a Cook in fast-paced environment

Certification of Culinary training

Food handling certificate

Expand and condense recipes

Previous guest relations training

Comprehend and follows various cooking methods, ingredients, equipment and procedures
