Description
Santa Monica Proper is looking for a talented Sommelier/Food & Beverage Manager for their Calabra rooftop restaurant and lounge. A seamless merger of historic retrofit and new construction, the 271-room Santa Monica Proper Hotel features interior design by international style icon Kelly Wearstler, multiple dining options by local area culinary stars, a rooftop lounge and swimming pool, and 16,000 square feet of meeting and event space.

Job Description

This position requires exceptional leadership and vision. The Sommelier/Food & Beverage Manager is responsible for fostering and developing an exciting, positive, results-based environment for the restaurant and the rooftop bar team. Must possess strong personal organization, genuine hospitality skills, and care for staff. Understands and implements contemporary luxury lifestyle standards.


This role will pay a base salary of $65,000 annually + uncapped tiered incentive plan based on all wine sales across the property including Banquets + Catering.  Potential total annual earnings likely ranging from $90,000 - $100,000 based on the candidate's total sales!


Responsibilities

  • Participate in creating and maintaining a positive working culture for all team members
  • Participate in overseeing hiring, training, coaching, development, and discipline for Outlet FOH staff
  • Liaise with and supports the goals of the culinary management team
  • Maintain the quality and consistency of the guest experience
  • Participate in Outlets financial performance and goal establishment
  • Seek new opportunities and strategies for the improvement of the Outlet operations
  • Maintain compliance with departmental policies, procedures, and standards
  • Oversee operations in compliance with legal and regulatory agency requirements
  • Exhibits, executes, and trains all team of Forbes 5 Star service standards
  • Complete daily, weekly, and monthly management administrative duties including operations reports, financial documentation, guest correspondence, human resources / staff management paperwork, operations evaluations, standard operating procedures, safety, and sanitations checklists, ordering and inventory documentation, and PR/marketing tasks
  • Keep up to date on current trends in the fine dining market
  • Progress, enhance and implement new wine offerings in conjunction with an evolving style in the fine dining world
  • Assists in wine management: inventory and ordering
  • Assists in wine training: preparing tech sheets, updating menus, and hosts tastings for educational purposes
  • Seek unique beverage offerings that differentiate us from the market


Skills/Knowledge Required:

  • Strong written, verbal, and non-verbal communication skills
  • Strong problem-solving skills
  • Proactive attitude with strong organizational and time management skills
  • The ability to motivate and inspire others to work cooperatively to achieve a designated goal.
  • The ability to maintain confidentiality of guest information and pertinent data.
  • Flexible schedule - Willing and able to work shift duties that may include evenings, nights, weekends and holidays.
  • Ability to exert physical effort in transporting equipment and wares.
  • Ability to withstand high temperatures, moisture and noise levels in work areas.
  • Ability to endure abundant physical movements in various work areas.
  • Passionate about the evolving trends in the food and beverage scene
  • Ability to lead wine seminars and trainings for team
  • Deliver seamless wine and Champagne service and training
  • Must be able to motivate and coach dining team productively and strategically
  • Strong knowledge of wine, wine making process, regions, varietals, and characteristics
  • Strong knowledge of food trends and fine dining cooking techniques
  • Comfortable operating and programming POS system
  • Ability to forecast business levels and purchase items proactively in-line with budgeted expenditures
  • Must be openminded and possess a positive attitude
  • Must exude a “work as a team” mindset
  • Must be able to multitask while remaining detail oriented and focused
  • Experience as a Sommelier, Wine Steward/Stewardess or similar role
  • Ability to create tasteful food and wine pairings
  • Extensive knowledge of different wines and which regions produce each type
  • Knowledge of local vineyards and wineries
  • Understanding of the winemaking process
  • Good communication skills
  • Availability to work during opening hours, including weekends and holidays
  • Flexibility to travel occasionally to meet with wine producers and visit wine-tasting events


Qualification Standards:

  • Education: High school graduate or equivalent education preferred
  • Experience: Over 4 years of hospitality experience, and 2 years of previous managerial experience in a similar position preferred
  • Licenses or Certificates: Serv Safe Preferred
  • Microsoft Suite experience a plus
  • Michelin experience a plus
  • Forbes 5 Star experience a plus
  • Certification as a Sommelier or degree in hospitality is a plus
