Description

We are looking for Line Cooks for all of our Katsuya locations. (Glendale, Brentwood, LA Live)

Line Cook is responsible for ensuring the highest quality food is served at all times. In this role you will handle all aspects to execute a cooking station – to include set up, stock product, and presents dishes according to recipe standards, cleans, sanitizes and maintains equipment, utensils and tools.

Line Cook qualifications:

  • Experience with sushi/fish fabrication
  • Ability to work positively in a fast-paced environment
  • Knowledge of weights, measurements, volume and cooking procedures
  • Must be fluent in the English language, both written and oral. Multilingual skills are a plus
  • Ability to work effectively within a team
  • Must be able to work quickly in a confined area and stand for extended periods of time
  • Understands and enforce federal, state, and local food sanitation regulations
  • Strong attention to detail
  • Continuous use of hands and arms
  • Works with a sense of urgency
  • Communicates with management, and all other team members to immediately rectify any and all customer needs and requests
  • Foodsafe Certification

Responsibilities

  • Set up and stocking stations with all necessary supplies
  • Prepare food for service (e.g. chopping vegetables, butchering meat, or preparing sauces)
  • Cook menu items in cooperation with the rest of the kitchen staff
  • Answer, report and follow executive or sous chef’s instructions
  • Clean up station and take care of leftover food
  • Stock inventory appropriately
  • Ensure that food comes out simultaneously, in high quality and in a timely fashion
  • Comply with nutrition and sanitation regulations and safety standards
  • Maintain a positive and professional approach with coworkers and customers

Skills

  • Proven cooking experience, including experience as a line chef, restaurant cook or prep cook
  • Sushi/fish fabrication experience
  • Excellent understanding of various cooking methods, ingredients, equipment and procedures
  • Accuracy and speed in executing assigned tasks
  • Familiar with industry’s best practices
