Description
As the name might suggest, D&D London’s Chop Houses take inspiration from the 19th Century traditional Chop House – marrying good food, engaging service and convivial atmosphere. In the heart of the City of London, an area once famed for its Chop Houses, the menu offering across the three sites is a refinement of those establishments.
Menus are inspired by the Chop House “brief and tradition”, changing frequently, daily specials, always seasonal carefully sourced ingredients, aged cuts of meat, free range poultry, wild game, day boat fish and crustaceans, the food style showcases excellence and skilled cooking, some restrained contemporary influences and flavours, so creating a balanced alluring offer.
This is an exciting opportunity to lead the hotel’s culinary offering with support from Executive Chef, Gary Foulkes.

Role:

We are looking for an ambitious and passionate Head Chef to manage all aspects of the food offering in our Chop House, private dining, in room dining and bars. You must be passionate about food, ingredients, seasonality and have the drive and ambitions to lead a team of people.

As Head Chef you will be the driving force behind the food offering in all the areas listed above ensuring our offering is seasonal, relevant and appealing.

We are looking for a person with a clear understanding of what it takes to run a successful commercial business and be an inspirational leader to the brigade.


Responsibilities:

• Exceptional standards and attention to detail
• Creative development of menus in Chop House, Private Dining, In room Dining and Bars
• Lead the brigade – Being on the front line and leading the pass is a must.
• Support the creation and delivery of F&B strategies
• Manage budgets, payroll, margins and all financial aspects of the kitchen
• Continued training and development of the brigade
• Strong knowledge of food safety, HACCAP, COSHH and health and safety
• Previous experience of working as a Senior Chef in a similar type restaurant or 5-star property
