Description
The Standard Grill is seeking a Sous Chef to head up our new Raw Bar program. Must have extensive experience in sushi, raw bar, and fine dining!

Executive Chef Kevin Chojnowski and Chef de Cuisine Ryan Jordan are seeking a Raw Bar Sous with AT LEAST seven years of fine dining experience, and 3+ years of Japanese restaurant/sushi experience. Must be a people person, as this role will work in the raw bar with frequent guest interaction.

The Raw Bar Sous Chef will be in charge of every step of the raw bar program, from ordering to plating, and must have an extremely attentive eye for detail, as well as the ability to delegate tasks and manage a team.

The ideal candidate:
1. Has 7+ years of fine dining experience
2. Has 3+ years of Japanese restaurant/sushi experience
3. Has a familiarity with Japanese ingredients
4. Has a good background in food handling, kitchen procedures and etiquette, etc.
5. Has an intimate knowledge of fish and seafood
6. Has some customer service/sales/retail background
7. Is able to lift/carry at least 50+ lbs., can spend full 8 hour shifts on feet
8. Is fluent in English, written and verbal
9. Is comfortable leading a team, and can take full responsibility for all production in the raw bar service chain
