Description
Leads the kitchen team in the execution of the Tacombi menu and representation of authentic Mexican Taco culture, while exceeding labor, COGS and operational targets.

MENU EXECUTION:

• Ensure the execution of the Tacombi menu. Lead and monitor all food production to maximize quality, consistency and freshness.

TRAINING & DEVELOPMENT:
• Fosters a kitchen environment built on teamwork and communication.

• Manage the hiring, training and development of all BOH staff including Sous Chefs. Build a bench of exceptional BOH talent through personal development and cross training.

• Manage the performance of each member of the BOH team to check growth opportunities for professional advancement.

• Train senior BOH team-members (Receiver & Sous) on ordering and COGS management.

SERVICE & OPERATIONS:
• Manage day-to-day kitchen operations; create and maintain systems and guidelines to increase efficiency and productivity of BOH team. Support line and work Kitchen Expo when needed.

• Work with Receiver and Sous Chef on daily Prep Lists and Order Guide.

• Build and manage a maintenance and repairs calendar to ensure proper maintenance of equipment.

• Ensure DOH readiness through diligently managing DOH standards.

• Write Chef’s notes in daily log book to improve communication flow between BOH & FOH.

FINANCIAL MANAGEMENT:
• Work with GM to build weekly BOH schedules to meet Labor targets based on expected sales. Manage daily labor by optimizing staffing and ensuring 100% compliance of DOL laws.

• Manage ordering, receiving, storage and utilization of products to meet COGS goals.

• Scrutinize food production to ensure consistency, quality standards, minimal waste and adequate portion sizes.

• Execute menu to ensure consistency of flavors, freshness of product, portion sizes and minimal waste
