James Beard award winning duo Chef April Bloomfield and Restauranteur Ken Friedman have arrived in Southern California. Their partnership began over 13 years ago with the iconic West Village restaurant, The Spotted Pig. Since they have opened The Breslin, The John Dory Oyster Bar, Salvation Taco and White Gold Butchers; and in San Francisco, Tosca Cafe.

Housed in the former iconic Spanish Shopping Court on Sunset Boulevard, this will be the duo's first Los Angeles outpost, and it represents a concerted effort to translate their lauded talents to a brand new environment. Just as their NYC-based restaurants are imbued with the culture and feel of the vibrant city that surrounds them, so too will the Hearth & Hound reflect the casual sophistication of LA. Think produce-centric cooking, an open kitchen built around a giant hearth featuring fish and foul, easy-drinking vins de soif, market-driven craft cocktails sipped on a gorgeous terrace....you get the idea.

Position Overview:

The Hearth Cook is responsible for all aspects of the hearth station.

Essential Duties & Responsibilities:

Responsible for serving fresh and properly cooked food in a clean and timely fashion.
Complete all station preparations / mise en place.
Apply professional knife skills, with precision and sharp knives.
Use of the correct equipment and utensil, depending on task.
Preparation of garnishes for the chef’s specials.
Cooking all proteins to the desired temperatures.
Season food accurately through various stages of cooking.
Controlling the hearth, to optimize heat without wasting wood.
Utilize time management to complete tasks.
Maintain a clean and professional cooking station at all times; Clean cooking equipment during all phases of service.
Monitor counts at the beginning and end of every service.
Communicate with chefs when product is running low before and during service
Proper storage and rotation of all proteins, FIFO.
Understand and follow ServSafe regulations.

Qualifications:

Education: High school diploma or general education degree (GED); Culinary School preferred. 2+ years of relevant restaurant experience

Basic Expectations: This is a BOH position and the hearth cook must be able to follow directions from the management team while maintaining a positive attitude.

Language Skills: Must have good working knowledge of the English language - ability to read and comprehend instructions, short correspondence, and memos.

Physical Requirements:
Constant standing and walking throughout shift
Frequent lifting and carrying up to 50 lbs
Occasional kneeling, pushing, pulling, lifting
Occasional ascending or descending ladders, stairs and ramps
