Description
Legacy Hospitality is looking for a highly experienced and dedicated Executive Chef to join our growing team!

JOB DESCRIPTION:
● Strong understanding of all Kitchen positions.
● Food inventory will take place on a weekly basis and food cost will be calculated using Ctuit Software.
● Setting appropriate prep and ordering par levels to ensure fresh food and budgeted food costs.
● Preparing all ordering and prep lists
● All matters regarding health code compliance
● All ordering excluding non-food prep alcoholic beverage (i.e. produce, bread, Sysco, china, smallwares, paper goods), etc.
● China and Smallware maintenance and inventory
● Set smallware ordering pars based on needs.
● Training all kitchen staff as well as ensuring BOH Human Resource files for each employee are complete and correct.
● Hiring and training Sous Chef.
● Calculating and managing labor costs for BOH employees.
● BOH employee scheduling, which will be written on a weekly basis.
● Interviewing and hiring all BOH positions based on needs.
● Educate FOH staff on food and preparation
● In charge of all Kitchen Repair and Maintenance as well as preventative maintenance on all equipment.
● Maintain standardized recipes and recipe books
● Put systems in place where waste is utilized in a feature format
● Put systems in place to keep ticket times less than 12 minutes
● Ensure consistency for all food items
● Kitchen manager will be working with the general manager and event planner to plan and price private events.
● Create, cost, and develop new/feature menu items.
● Maintain and develop food vendor relationships.
● Monitor and certify food invoicing and credit tracking.
● Maintain kitchen cleanliness and sanitation.

REQUIREMENTS:
● Servsafe certified for both Chicago and Illinois
● Culinary degree preferred
● Bilingual preferred
● At least 6 years of kitchen management experience required
● Organizational skills and cleanliness is a must

BENEFITS & PERKS:
● $300 a month towards company medical and dental plan
● Paid Time Off: 10 days a year, gain one day each year maxing at 20 days a year
