Strategic Intent

Oversee overall day-to-day operations within the All day and Fine Dining Restaurants and In Room Dining. Maintain an efficient operation of the Restaurants and In Room Dining departments and meet guests’ expectations for quality of the product and service. Assist the Restaurant General Manager as requested for long-term planning within each business unit.

Organizational Structure

The Director of Outlets will report to the Director of Food & Beverage. S/he will supervise the daily activities of the restaurant and bar managers and room service management.

General Duties and Responsibilities
•Assist the Director of Food & Beverage with the operations of All Day and Fine Dining Restaurants and the In Room Dining Department; assist with the writing of departmental SOP’s.
•Provide leadership and support to mid-management and line staff throughout the restaurant and In Room Dining operations.
•Attend pre-conference meetings as needed.
•Assist daily departmental meetings and lead line-ups as needed.
•Communicate all group information/changes to existing information to appropriate hotel associates in an accurate and timely manner.
•Maintain an active trace system for guest history on their F&B preferences.
•Audit checks when necessary; assist with corrections in MICROS; run shift reports and assist associates with close out when necessary.
•Assist with the training and onboarding of all new associates.
•Maintain an active presence on the dining room floor, assisting guests and addressing concerns, resolving issues and providing all guests with a distinctly Watergate dining experience.
•As directed the following additional duties may include but are not limited to:
•Assist with the monthly and weekly forecast
•Monitor payroll of department
•Attend daily communications meeting
•Attend weekly department head meeting
•Attend scheduled food and beverage meetings
•Develop and update menus, as appropriate
•Revise standard and procedures for department, as necessary

Experience and Requirements

•Must possess at least 5+ year experience as an F&B manager in a luxury hotel food and beverage operation OR upscale/fine dining establishment.
•Must be willing to work a flexible schedule that will include early mornings, late nights, weekends and holidays.
•Must be proficient with MS Office, Excel, PowerPoint, Word, MICROS, Opera.
•Must have be a superior organizational skills and strong multi-tasking abilities.
•Must have strong communication skills with fluency in English required. Those with bi-lingual abilities will be preferred.
•Bachelor’s Degree in Hospitality or related field is preferred.
•Must be able to meet the physical demands of the position such as walking/standing for extended periods of time while on shift; lift/carry/pull/push 25 lbs. +/-.
