Junior Sous Chef - XU Teahouse & Restaurant

We are looking for an experienced and diligent Junior Sous Chef to assist in the day to day running of our kitchen in our 70-seat restaurant in Soho. Serving innovative & classic Asian dishes, XU Teahouse & Restaurant is reminiscent of the original social clubs and the luxury dining rooms of 1930’s Taipei, offering a unique journey into Taiwanese culture.

The menu reflects the quality of locally-sourced ingredients, including seafood from Scotland and beef from Cornwall. To ensure the quality of our dishes everything is produced in-house, including baking, fermenting and curing. The restaurant is situated over two floors: ground floor tea rooms and Mahjong rooms and the first-floor dining room.

The successful Junior Sous Chef will receive:

As Junior Sous Chef, you will be responsible for ensuring the delivery of consistent, high quality and innovative dishes and specials; you will play a key role in menu development, working closely with the Head Chef & Directors; and you will assists in managing the overall kitchen operation, including prep schedules, stock control, budgeting and maintenance, as well as the day to day management of the kitchen team.

If you have the following, then we want to hear from you:
• Previous experience as a Junior Sous Chef or Senior Chef de Partie in a high quality Restaurant or Michelin;
• Strong awareness of trends and seasonality of produce;
• Previous experience of small producers and suppliers;
• A highly creative approach to your work with excellent attention to detail;
• Proven ability to manage a large kitchen team, including team leadership, motivation, training and development and
performance management;
• Ability to motivate self and team;
• Strength in logistics, stock and margin controls, and ordering systems (FnB experience beneficial);
• Ability to manage staff costs and schedule and review rotas accordingly;
• A working knowledge of health and safety compliance and procedures;
• Experience in or a passion for Asian cuisine;
