We are currently seeking a Pastry Cook with lamination expertise to join our talented baking and pastry team.
Position Summary:
As a Pastry Cook at 1228 Main, you’ll focus on the preparation and execution of high-quality laminated doughs and artisanal baked goods. The ideal candidate is passionate about viennoiserie, has a sharp eye for detail, and can consistently produce large batches of croissants, kouign-amanns, Danishes, and other laminated pastries to the highest standards. Experience with bread baking and general pastry production is also essential. This role requires precision, speed, and a strong understanding of dough development and fermentation. This is an afternoon-to-evening shift position, ideal for individuals who thrive in a fast-paced, high-standard kitchen environment.
Key Responsibilities:
Produce laminated doughs (croissants, danishes, kouign-amanns, etc.) with precision and consistency
Operate sheeters and other bakery equipment safely and effectively
Mix, proof, shape, and bake a variety of breads and pastries
Assist with pastry prep including fillings, glazes, and other components
Follow production schedules to meet daily and weekly volume demands
Maintain cleanliness, organization, and food safety standards throughout shift
Work closely with the Pastry Chef and team to improve processes and product quality
Qualifications:
1–2 years of professional experience in a bakery, patisserie, or pastry production kitchen
Demonstrated skill in mass-producing laminated doughs, including croissants, breads and pastries required
Experience with high-volume pastry and bread production preferred
Strong knowledge of fermentation, temperature control, and proofing techniques
Ability to work efficiently under pressure with consistency and attention to detail
Team player with a strong work ethic and passion for artisanal baking
Flexible schedule availability, including afternoons and evenings
