SUPERSTAR SOUS-CHEF NEEDED NYC


Sous-Chef/Manager needed at newly built out restaurant.
Knowledge of Mexican cuisine a must!

Must have 2 years experience in the Sous-Chef position.

Verifiable references a must.

Must have extensive knowledge using the CVAP cook and hold oven as there is no open flame permitted on site.

Must have expertise in cooking and holding various proteins.

Must be able to enforce strict recipe guidelines and food quality per order.

Will be responsible for daily kitchen food times and daily QA.

NYS Health Dept. Lic. A must. Will work to prepare and sustain “A” letter grade and any city agency requisites. These include the D.O.H., F.D., D.E.P. and others.

Must Enforce a clean and organized kitchen culture.

Will work to streamline the flow of the kitchen, recipe adherence, speed of service, Kitchen staff training and scheduling.

Must be able to manage Inventory and cost controls and maintenance of facility effectively.

Must be able to communicate and work well with F.O.H. and management staff.

Five day work week, Two weeks paid vacation offered at the end of one calendar year, health insurance offered after completion of probation period. Quarterly dining card account at all restaurants in our group. Compensation TBD.
