Kitchen Manager


Description
Austin Proper Hotel & Residences is seeking a Kitchen Manager. This 32-story modern high-rise will include 244 rooms and a limited collection of 99 branded luxury residences and penthouse for sale. Amenities include two rooftop pools, wellness center and spa and three food & beverage destinations driven by McGuire Moorman Hospitality.

The Kitchen Manager will work with the Executive Chef, Executive Sous Chef, Director of Food & Beverage and all partners in the opening of hotel to prepare and open multiple restaurants, Bars, Banquets, and In Room Dining. Some of the responsibilities for the Kitchen Manager will be the oversight of the stewarding department to enforce the highest possible cleanliness and hygiene standards in all food processing facilities, as well as the operating equipment. Main responsibilities include dish room operations, night cleaning, back area cleaning and maintaining the department’s equipment, as well as assisting the Executive Sous Chef with day to day operation of the second-floor kitchen with a focus on commissary food production.


Responsibilities
• Supervise the sanitation, cleanliness and hygiene as well as the quality level of product and services
• Scheduling of the stewarding colleagues to ensure appropriate coverage in all F&B operations
• Ensure compliance with food handling and sanitation standards
• Ensure compliance with local environmental and recycling guidelines
• Plan and manage the procurement, production, preparation, and presentation of food in the hotel in a safe, sanitary, and cost-effective manner
• Assist with preparing monthly reports on shortages in china, silverware and equipment and requisition replacements as required, while following budget guidelines

Qualifications
• Minimum 3 years of culinary experience in a similar Leadership position
• Strong leadership skills to manage and motivate the team
• Excellent organizational and planning skills
• Excellent communication skills
• Knowledge of hotel operations or high-end restaurant required
• Ability to work well under pressure in a fast-paced environment
