Description
ABOUT THE COCKATOO The Cockatoo is a new table service cocktail bar with added entertainments, residing underneath Bistrotheque in Bethnal Green. Open Thursday to Saturday evening and potentially Sunday afternoon, The Cockatoo will be an LGBTQI+ safe space.    

THE ROLE The manager role is a service-orientated one with responsibility for the smooth running of The Cockatoo when open, bringing the team together to deliver great drinks, on-point service and a good time to our customers—hopefully converting them into regulars. Even if the entertainments get messy, you will make sure service does not stop and waiters stay in control of their sections. We don’t believe managers can do this whilst sitting in an office, so there isn’t one. You'll be out front, leading by example. Your responsilities will include ensuring correct set up & closedown, driving our order of service, hosting, hitting sales goals, briefing and debriefing, organising on shift training, placing FOH orders and completing simple reporting. 

  • HOURS: 30-35 hours week.  Stable rota Thurday-Saturday evening, closing at midnight, and Sunday afternoons.  At least 3 consecutive days off.  6 weeks holiday, 4 of which are to be taken in August each year.
  • LOCATION: E2, very close to Cambridge Heath Overground and a short walk to Bethnal Green Underground. 
  • REMUNERATION: £12.00 per hour house pay plus generous tronc. We expect this role to earn at least £20 per hour overall once tronc criteria is met.  

ABOUT YOU At least a year's experience in either a bar, restaurant or nightclub at senior waiter or senior bartender level or above. Experience of table service at some point in your life is a must. Potentially suit someone from a night club/bar background but who is over super late nights. You must be passionate about cocktails and creating a fun atmosphere. A natural communicator and leader, you will easily build relationships with both the team and customers. You know how to deliver a party but understand that a business needs to be organised & professional under the bonnet. No massive egos, this job is about nurturing a team and managing within a given framework. It is possible to combine this role with something else in your life - study, another job, freelancing, etc - our only stipulation is that your something else has zero impact on your commitment to this job, which must be total.
