In acquiring the former Maisonette building, BRG also obtained the La Normandie space located in the rustic basement. The former steakhouse was dark and cozy with a large fireplace. The space screams comfort, authenticity, and pasta! To pay homage to the ancient brick and mortar, Chef Falk developed the Sotto concept. Tenacious and restrained, hardcore and heartfelt, we practice the tradition of generations of chefs in an underground hideaway. Director of Culinary Responsibilities

+ Must be located in/relocatable to Cincinnati, Ohio

+ Position will support the culinary operations for Boca and Sotto, grossing $10M+ in sales. 

+ Work with the FOH Director of Operations to develop short-term and long-term goals and objectives for each restaurant that correlate with the company’s overall goals.

+ High energy and drive for enhancing a concept built around chef-driven cuisine, traditional cooking techniques, and operational excellence for an incredible world-class guest experience.

+ Hiring, training, developing, and coaching a team of 10 salaried chefs to ensure consistent delivery of standards, food quality, and execution of recipes for the exceptional guest experience.

+ Monitor staffing levels (leadership and hourly) and provide support whenever and wherever necessary.

+ Your role will focus on implementing SOPs and pushing to obsess over details to streamline product and labor utilization.

+ Full financial accountability of P&L and menu costing via our Compeat accounting system.

+ Partners with Chef de Cuisines and Sous Chefs to ensure all company policies are followed.

+ Conducts daily facilities audits 

+ Will report to the VP of Restaurant Operations and will assist with strategizing same-store growth

 

 

Qualifications

+ 2+ years director level experience

+ 5+ years as executive chef for upscale, high volume restaurants (preferably with a passion for French and Italian cooking)

+ Proven history in building and developing teams

+ Strong experience with leading with a systems-based approach

+ Polished demeanor

+ Creative thinker
