As Bodega Taqueria y Tequila continues to expand its national footprint, we are looking for an experienced Beverage Director to join our evolving team!
Offering traditional Mexican favorites as well as unconventional and innovative interpretations, Bodega specializes in tacos and tequila in a dynamic, eclectic “puebla” inspired setting. Disguised behind a meat locker door, the no-name speakeasy behind Bodega comes alive at night, serving up Miami’s best tequila and cocktails in an environment that brings the fabric of the community together – artists and musicians, locals and travelers alike – for late night conversation, performances and fun.
POSITION PURPOSE
Plan, direct and oversee all bar operations including recruitment of staff, training and development of staff, development of beverage program based on brand standards, ensuring product and service standards are met and implementing and maintaining procedures for maximum operating efficiency.
- Ensure company policy and Beverage Brand Standards are followed.
- Optimize profits by controlling beverage and labor costs.
- Hiring, training and developing new hourly team members.
- Increasing sales by ensuring guest satisfaction and proper price point are executed
- Maintain an overall management style in accordance with our established best practices.
- Provide leadership and direction to all team members to ensure efficient operation.
- Ensure beverage quality and availability.
- Oversee and supervise beverage staff members have the tools to do their jobs.
- Complete all tasks assigned by Director of Food and Beverage on time.
- Optimize profit by ordering beverage and supplies to maintain appropriate inventory, portion correctly, minimize waste, etc.
- Maintains accurate beverage inventories on a monthly basis
- Works with the finance department to provide accurate flash cost reports
- Maintains a great relationship with vendors and ensures best cost price for beverage purchases
- Immediately communicate and report equipment problems, practice good preventive maintenance with the Engineering team.
- Increase sales by ensuring guest satisfaction and prompt problem resolution.
- Exercise good judgment and decision making in escalating concerns and aggressively resolve issues.
- Ensures the environment at the bars supports our core values and encourage fun in the workplace.
- Responsible for compliance with OSHA, local health and safety codes as well as company safety and security policies. Emphasize safety, sanitation and security awareness, and ensure that team members are properly trained to create a safe work environment.
- Maintain cleanliness and organization of all beverage storage areas.
- Partners with third party restaurant operators to assist in anything related to the beverage programming
- Maintains adherence to the company’s Core Beverage Program.
- Responsible for maintaining appropriate pars and requisition process standards in all areas.
- Ensure adherence to company cash handling and payment processing procedures.
- Maintain beverage quality standards for all bars.
- Responsible for the selection, on boarding and retention of team members through motivation, recognition, coaching and development.
- Maintains cost theoretical for all recipes
- Creates or maintains standardized recipes for all cocktails throughout the property
- Ensures all recipes are being followed at all times
- Up to date training manuals for all bars on property
- Maintains proper guidelines for all liquor partnership/sponsorships
- Maintains proper logs for all beverage related interdepartmental transfers
- Ensure that all menu pricing is up to date and in line with the comp set at all times
- Keeps the F&B Director and upper management abreast to any pertinent information involving beverage department
- In charge of reporting beverage related financial results
- Liaise with PR Team to keep Bodega Bar program relevant in the market and press worthy
- Develop seasonal cocktail specials
- Responsible for wine selection and pricing at all bars
- Respond in a timely manner to all beverage related guest complaints
- Develop a positive culture around beverage
- Create an atmosphere of enthusiasm and passion around beverage
- Train all service staff on beverage related items
- Consistently test service staff to ensure beverage knowledge exceeds expectations
- Consistently test bar staff to ensure knowledge and execution exceeds expectations
- Maintain efficiency at all bars to ensure timely delivery of all beverage to guests (ticket times)
- Maintain proper staffing levels to exceed guest expectations
JOB REQUIREMENTS

- Must be at least 21 years of age
- Minimum of 2 years’ experience in similar position, resort setting preferred
- Record of maintaining high standards in restaurant cleanliness, sanitation, food quality, and guest satisfaction.
- Bi-lingual preferred.
- State and local alcohol enforcement.
- High school diploma or equivalent required, college degree preferred.
- Passion for the business and compassion for people.
- Highly-energetic, self-motivated, goal oriented and dependable.
- Excellent oral and written communication skills, and outstanding leadership, interpersonal and conflict resolution skills.
- Basic business math and accounting skills, and strong analytical/decision-making skills.
- MS Office
- Must be able to work a flexible schedule including opening, closing, weekends and holidays.
- TIPS Certified
- Exposure to P&L and Sales building a plus.
