Food & Drink Development Manager


Description

Purpose 

You set the standard of product quality and innovation, you will create menus that are innovative and in line with our brand values. You will manage the design, development and launch of all new food and drink onto our menu: ensuring these products enhance our customer experience. You will inspire and guide the wider BTP team to join you on the journey along the way.  

Alongside this, you will work with the wider Brand and Finance team to ensure we continue to manage strong supplier relationships, continuously improving product quality and/or theoretical margins.  

Job Expectations  

Product Development & Innovation 

  • Develop market-leading food and drink based on trends & consumer insight that is consistent with brand values & are operational and commercial viability.  
  • Research product trends, identifying which are relevant for our business.   
  • Alongside the wider HQ team, create and deliver inspiring product launches that engage the whole business. 
  • Carry products from initial approved ideas through to launch, ensure the relevant systems & legal requirements are up to date. 
  • Inspire & train the Ops Team & Trainers to ensure the smooth launch of new products, setting quality standards, organising launch training days & videos. 
  • Alongside the Marketing Manager, you will manage all product photography (for both marketing & specifications). 
  • Write recipe specifications, to ensure they are thorough, consist and easy to follow. 
  • Lead product reviews & ensuring that feedback sessions result to make things better and fulfil the original brief.  
  • Spend Time on our cafes to engage the café teams to glean direct feedback, generating ideas and fully understanding that impact new products have on our business.  
  • Along with the wider brand team collate and investigate and use customer feedback to guide the NPD process. 

Stock management & Systems 

  • Research & source ingredients that are delicious, top quality and in line with our brand & sustainably credentials.  
  • Manage the recipe creation within our stock management system (Comtrex). 
  • Manage product costings through recipe creation to ensure we achieve our  group theoretical margin targets. 
  • Check and manage legal allergen information for ingredients, batches and finished products and ensure that (along with the operations team) the correct processes are in place to manage allergens. 
  • Test & product the shelf life information for all new batches and products. 
  • Review contribution after labour of dishes/menus.
